There is that. For me it's staring at the moving map, if one
is provided; barring that, sleep and/or alcohol.

I always look several times if the initial price isn't to

The elderly are a growing market; someone has to realize
that at some point and provide meals, housing, trips and
other entertainment for them. Jim talked about the wisdom of
how his parents adapted their last house for senior life;
more developers and builders should do likewise.

We struck out on our own at what would have been quite a bit
less than a tour, but my unfortunate loss put the cost way up.
Still, it beat being with a bunch of strangers of Axis parentage,
which most of the tours these days are.

Chicken Eggplant Bhutuwa
categories: Nepal,
Yield: 1 batch

2 lb chicken breasts, cut into 1" pieces
- (can be substituted with lamb)
3 c eggplant, cut into 1" long, 1/4" strips
1 c tomatoes, sliced
1 ts garlic, minced
1 ts ginger, finely grated
5 dried whole red chilies
1 ts whole cumin seeds
1 ts cumin powder
1 ts curry powder
1/2 ts chili powder
1 ts turmeric
2 Tb cooking oil for browning
2 Tb cooking oil for stir frying
1 c broth or water
1 Tb cilantro, finely chopped, for garnish
Salt and Pepper

Tender Chicken Stir-Fried with Eggplant, Nepali Style

In a large bowl, combine chicken pieces with 1/2 ts turmeric,
salt, and pepper. Mix well, cover, and let marinate 30 min.
In a nonstick pan, heat 4 Tb cooking oil. Brown chicken on
all sides and set aside. Drain excess oil. Heat 2 Tb oil and
add cumin seeds and dried whole chilies; fry until dark. Put
turmeric, garlic, ginger, cumin powder, chili powder and
curry powder; stir for 1 min or so. Add eggplant pieces,
salt, and pepper; stir-fry until slightly wilted. Add
tomatoes and chicken pieces. Add broth if required.
Stir-fry the chicken mixture for 10 min or until chicken is
cooked tender. Cook in low heat until the excess liquid is
evaporated off. Adjust seasoning. Garnish with chopped
cilantro. Serve with rice, or roti (flat bread).
