Yup!  I see this version still traps DD as quoters. Ah well.  

I froze some of that chicken and am making a meal tonight of some of it.

Loosely based on something of the taste of an indonesian influenced version of
a new england recipe that i had in singapore in a little dive and now recreated
here.  I think I got it right.  Shifted of course to a crockpot.

2 cups leftover rice
4 oz evaporated milk
1 can cream of asparagus soup
2 tb cococunt concentrate (cream)
1/2-3/4 cup chopped carrot
1/2 minced milder pepper (not jalapeno but still a pepper)
Minced ripe and green olives (ok, that was me)
Sliced cheese (a melty yellow was on hand, mild and slightly smokey)
1.5 cup ripped up chicken meat

This made a thick and meaty sort of cassarole/stew that would do well as a
filling to a bread bowl or as a filling to a baked potatoe or just as it is, in
a bowl with a big hunk of fresh baked bread.

Other than the olives, tastes like what I had in Kowloon and listed there as 
'American New England Chicken Stew' (snicker).  I seriously doubt any New
England folks would recognize it but then again, if you swapped the rice for
potatoes, maybe comes a bit closer?

Hilarous bit?  They served it with kimchee.  Not so hilarious and actually
perfect was a side setting of salted cashews.  Tht was the perfect match but
best as a side, not in the dish.  I'll admit, I liked the kimchee side as well!
