I'm usually right there if I've got something on high.  Either that or
there's enough head room in the pot that what's in it won't get out.

I've got some things I like to cook for hours--marinara sauce for one.
I'll bring it to a boil for starters but then crank it way down,
stirring every so often.  Other things go in between; the lentil stew I
made last night was on about a low-medium (about 8 o'clock).  My dial
goes low (about 11), medium (6) and high (1)--all else is just
guesstimation.

You might have an antique worth thousands or you might have junque worth

We're on our 3rd freezer.  Had that one, then after several years in AZ
we got a 10 cubic foot one.  That stayed in HI with a military family
that needed one.  In GA we got a 7.5 cubic foot one, our current one.
Sometimes that's a bit too small but it fits our house best.
