Lol.. well, you probably eat as many vegetables as I do.. well, maybe I eat
more.. If I do it's because I only cook the ones I like (grin).

Some of the cooking I've experimented with and learned like Korean, Chinese,
etc. make use of the vegetables I like (smile).  Outside of that, well,  it
took me a while to get past the Brussell Sprouts thing.. nothing like one bad
meal to turn you off to something - My mom had no idea or interest in finding
out the best way to cook those so we got nasty Brussell Sprouts when I was a
kid.  I still will not eat lima beans. No way, no how (grin)

I've been on a fish kick lately..  mostly salmon though.. I took a totally
healthy recipe and made it sickenly fattening with bacon rendered til crispy
first, and garlic, onions and fresh breadcrumbs sauteed in the bacon fat hehe..
The salmon was served with the bacon mixture on top of course.

This one is probably better for you though though I'm not a big fan of
buttermilk..

===Fish Parmesan===
Preheat oven to 350F

Ingredients:
White fish fillets such as cod, scrod, bass, tilapia 1 cup buttermilk
1/2 teaspoon onion powder
1/2 teaspoon celery powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups Italian bread crumbs
4 Tablespoons Italian cheese, grated 1 Tablespoon parsley, chopped

Combine the buttermilk with the onion powder, celery powder, salt and pepper. 
In a separate bowl, combine the Italian bread crumbs, the cheese and the
parsley.

Dip both sides of the fish into the seasoned buttermilk, then dip into the
bread crumb mixture.

Grease a baking pan or broiler pan and bake the fish at 350F for 25-30 minutes,
or until done.  Serve with lemon wedges or sliced lemons on top.
