===============
Hi Janis,

>> were much healthier. She is all Italian as I am, but her mom never
>> cooked much.

JK> > I've given copies of his mom's sauce and meatballs recipies away I
 JK> don't > know how many times.

JK> Same here. It was so funny, maybe about 10-15 years ago Ron and I
JK> went back to the village where I grew up, Warwick NY, to visit some
JK> friends I hadn't seen since high school. The elder of the two sisters
JK> we visited pulled out a worn and ragged piece of looseleaf - it was my
JK> recipe for meatballs, sausage and tomato sauce I'd written down for
JK> her, and she said, "I still make this recipe often!". It's still the
JK> same recipe I use today, so we all had a good chuckle over that.

Some things never change. For years I did my MIL's recipe pretty much
just as written. Some time in the last 10 years or so I started
tinkering it and now do it my way more often than not. Of course I
changed the meatballs slightly almost from the beginning by using home
made whole wheat bread crumbs. (G) For the past probably 10 years also,
I've used Peccorino Romano cheese in them and Pamigian Reggiano cheese
instead of the red & green cans of name brand sawdust.

JK> I remember funny things from High School as well.. boyfriends coming
JK> over to visit, but they'd make sure they came on Sunday late
JK> afternoons when they knew Mom would have that huge pot of sauce and
JK> meatballs cooking :) I also remember her swatting at them, saying
 JK> "Only take one!" hehe

Nothing my mom ever did. Sounds almost like what my MIL would have done
except she would encourage you to take more meat balls or sausage or
whatever.

>> though since removing it from my diet (g). And now, most off-the-shelf
>> gluten-free flours, cakes, and breads are full of cornmeal or other
>> corn products so they're on my do-not-buy list... makes for more
>> experimentation :)

JK> > Probably just as well you didn't, especially knowing there were
JK> > allergies in the family.

JK> When I'd first gotten MS (geez, talk about another lifetime), that was
JK> when I was 24. I visited a health specialist who told me then to get
JK> off all wheat products because he felt they wrecked havoc on any
JK> person with immune diseases. Unfortuntely I didn't listen then.. there
JK> weren't as many options then as there are now. He obviously was right
JK> though given what people know now about how wheat can get to some
 JK> people.

Interesting that all these developments are now more mainstream than
they used to be.

JK> > Rachel had a bit of trouble, but probably more
JK> > from the tomato than the pasta, when she was young but outgrew it.
JK> > Deborah uses whole wheat pasta but Rachel uses a mix with her
 JK> family.

JK> Both my son and daughter have problems with tomato products.. my
JK> daughter moreso than my son.. His only affects him when he eats too
JK> many other of his known allergens like dairy products or wheat bread
 JK> sandwiches.

JK> My daughter's allergist is taking an interesting approach, which I
JK> think I've mentioned in here.. no nightshades.. since if a person is
JK> allergic to one in the nightshade family, chances are there are more
JK> problems with others. I don't know how true this statement is but
JK> I've seen some who say 'If a person is allergic to one nightshade
JK> food, then there is a 75% chance they will be allergic to all
 JK> nightshades.'

JK> For her it's very true. I don't know how true it is for me though..
JK> eggplant does burn my mouth sometimes though :( Sauce doesn't seem to
JK> bother me at all thank goodness (g).

At least she has a doctor willing to work with her, not just throw pills
and not neccessarily good advice at her. I think doctors, especially
specialists, are more "in tune" with individual patients instead of
seeing them as just a "name/face in for 3 month check on this problem".
