Spam Fried Rice
cat: mine, main
servings: 4

1 sm cn Spam, cut into 1/4" to 3/8" dice
4 oz frozen peas
1 carrot, diced - or 4 oz frozen diced carrots
1 sm onion, diced
4 scallions, sliced, including the green part
1 or 2 cloves garlic
oil
1 c raw long-grain rice
2 extra-large or 3 large eggs, beaten with
1 Tb soy sauce
soy sauce

Cook rice according to your favorite method, but make sure to keep it
firm (al dente), with the grains separate. Cool it to or past room temp.
This is best done the day before.

Sizzle 1 slightly crushed garlic in oil (probably a couple of Tb); add the
Spam and fry, stirring constantly, until the Spam cubes are crusty brown
and no longer smell like Spam. Discard the garlic. Remove the Spam to a
warm plate. In the same oil, saute the carrot for 1 min.; then add the
onion and cook until the onion is translucent. Remove the vegetables to
the same plate as the Spam. Heat oil to high (the same oil, if it looks
clean enough; otherwise use a fresh pan, a couple Tb fresh oil, and a new
garlic) and add the rice. Do not stir or disturb in any way. Add the
peas, half the scallions (all the white part and some of the green
part), and the eggs. Fold all this into the rice until everything is
moderately well incorporated; then fold in the Spam and the vegetables.
Cook until a delicate crust forms on the bottom. Serve on a warm
platter with the rest of the scallions strewn on top. Pass the jug of
soy sauce to help each diner kill the taste to his own preference.

 We used the second, and last,
 RH> packet of frozen, mixed seafood tonight.

I have a problem with premixed just about anything, and
that is that I like to cook things separately, or at least
time them separately. Of course, with shellfish, everything
should be cooked as little as possible.

 Stir fried it in garlic & oil
 RH> (and a bit of chili oil), then added some stir fry veggies. Added a
 RH> sauce of water, soy sauce, corn starch and chili-garlic paste rounded
 RH> it out--had a nice back of the mouth heat but not a lingering one.

Sounds kind of nice, though.

Spam Fried Rice

servings: 4

3 c cooked and chilled jasmine rice
1 Tb chopped fresh basil
1 Tb chopped fresh cilantro
1 Tb chopped scallions
1 whole egg
1/3 lb Spam, cubed
1 Tb neutral oil (such as canola or sunflower oil)
1/2 ts sesame seed oil
5 dr fish sauce
2 Tb soy sauce

In a hot pan, place neutral oil and sesame oil. Once hot,
add rice and saute (a wok can be used if you have one).
Add in the meat, heat and sear. When completed, push to
the side of the pan and add the egg. Break it up and
scramble in the pan. You want it to be scrambled in the
pan so there is a contrast of yellow and white. Fold all
the ingredients together. Add the herbs and fold, now
add the fish sauce and soy sauce. Season with salt and
pepper to taste.
