Engine failures always get commented on when they take place on
large commercial aircraft. It's big news when a couple hundred
people, already unsupported by anything other than the laws of
physics, come close to a crunchy demise. Given that a large
percentage of these people have iPhones and video recorders,
it's completely inevitable nowadays.

I am glad that Lilli was right on that score, and it was a luncheon
Courvoisier anyhow.

If they were so nervous, could not the appropriately-trained
engineers and technicians been flown out to the afflicted
aircraft on something more reliable, say a 777 with Pratt
and Whitney engines?

No, I figure the big ones would exist in the lower bowels of
office complexes and perhaps in the tough, smelly neighborhoods,
neither of which I'm particularly keen on. The food halls I've
encountered in Hong Kong are pretty contained and civilized.

ORIENT EXPRESS CHICKEN BREAST
cat: main
servings: 2 to 4

1 lg chicken breast, washed and sliced
1/4 c teriyaki sauce
3 Tb sesame seed oil
1 lg white onion, sliced
1 Tb ginger, minced
2 Tb oyster sauce, Hongkong style
1 Tb light soy sauce
snow peas (chicharo)
coriander leaves

Heat the oil in a saucepan, add onion, ginger, and oyster sauce.
Sauce on the chicken breast and let stand for five minutes.

While sauteeing, add the marinated chicken breast. Save
the marinade of teriyaki sauce.

Stir the chicken to coat with the sauteed ingredients Keep
covered for 25 minutes and simmer. Add soy sauce and remaining
marinade. Let boil. Season to taste.

Add snow peas and coriander in the last few minutes of cooking.
Serve hot.
