Those are some frightening numbers: 1400 in a day's length.
As a driver, my record was maybe 20 km in a day, but that was,
given my eyesight, perhaps close in harrowingness to yours.

The most I've experienced on the road was when my b-i-l drove
us from Detroit to New York nonstop (actually one fuel stop and
one potty break) in one day's daylight - about 1000 km.

In the air, my field of expertise as it were, I've traversed
humongous distances in comfy and mindless travel.

I've done these trips in coach, which though equally mindless
is not comfy:

18900 km in a 25-hr day (also done this route in biz, far preferable)
20500 km in 40 hrs straight, leaving aircraft and airports for only
3 hrs of that.

Gngngngn. It'd cost me as much to go to Albany as to San Fran and
another $119 from Albany to Ogdensburg. I discover that Cape Air's
nonstop BOS-SLK (Adirondack Airport) is 49.50 each way; now just
getting to this cabin from that airport (75 miles) is another issue.

Probably I'll try to ride with the Shipps or the Shenks anyway.

Carol's Baked Chicken
Categories: Chicken, Diabetic, Main
Yield: 8 Servings

3 lb chicken (whole)
1 lg red or white potato
1 md onion
2 carrots
1 squash (yellow or green)
Salt and pepper to taste

Start oven at 400 degrees, and unwrap a defrosted chicken. 
Remove the gizzards and save for something else. Now chop 
up in large pieces, all those veggies. Got a big pot? Put 
these at the bottom and put the chicken on top. If it 
doesnt all fit, put some of the veggies inside the chicken.
Best trick is lift chicken on a small metal rack or on a 
tuna/catfood can that has been emptied and washed out with 
holes poked at the top.

Optional: other veggies are fine. I use green beans, whole 
pea pods, and leeks at times.

Fat savings: Remove the skin and cover the pot. May desire 
to add a can of tomato soup or paste to prevent drying.

Serve with: Baking soda cheese bread and plump green and 
black olives. For dessert, consider something lite such as 
a delicate sugar free mocha coffee or apple cinnimon herbal tea.
