 DD> 1 c  Unsalted butter
 DD> 1/2 c  Water
 DD> 3 c  Unsalted raw cashew nuts;
 DD> -coarsely chopped *
 DD> 2 ts Baking soda
 DD> 1 ts Vanilla extract
 DD> 
 DD> Butter 2 baking sheets and set aside. Butter the
 DD> sides of a 3-quart saucepan, and add the sugar,
 DD> corn syrup, butter, and water. Stir over low heat
 DD> until the butter has melted. Increase the heat and
 DD> bring the mixture to a boil. Continue cooking over
 DD> moderate heat, without stirring, for about 20
 DD> minutes, until the temperature reaches 275øF.
 DD> (soft-crack stage) on a candy thermometer. Add the
 DD> cashew nuts and continue cooking for about 5
 DD> minutes, until the candy thermometer registers
 DD> 295øF. (hard crack stage.) You may stir
 DD> occasionally, if necessary. 

 DD> Remove from the heat and immediately sift the
 DD> baking soda evenly over the surface. (Be
 DD> careful---the syrup will foam up.) Add the vanilla
 DD> and stir to distribute the soda and vanilla
 DD> throughout the mixture. 

 DD> Pour at once onto the prepared baking sheets. Tilt
 DD> the sheets to spread the brittle about 1/2-inch
 DD> thick. Allow to cool until firm. Break the brittle
 DD> into pieces and store in an airtight container.

 DD> Variation: Peanuts or other nuts can be added
 DD> instead of the cashews, or you can use a
 DD> combination of several nuts. Always choose the raw
 DD> unsalted nuts that are available in health-food
 DD> and speciality stores. The nuts will cook and
 DD> "toast" when added to the hot syrup.
