This was an odd weather pattern ... we got clipped by the edge of a cyclonic
pattern coming down across the Great Lakes and into the south. I suppose we
were lucky to get just the (officially 4.5") six to seven inches I had to
shovel off my car. The sad part about the deep south is that they think that
salt is something to put on French Fries ... not on roads. Tennessee, being
somewhat a border state has more snow handling equipment than, say down the
middle of Alabama where Pat and Steve Stockett live. But, no more often than
they get clobbered it makes no economic sense to have dedicated, single purpose
snow/ice removal equipment.

We're supposed to have rain by the end of the week. The good thing about that
is that it won't be icy on Amateur Night and you don't have to shovel rain.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Chinese New Year Noodles
 Categories: Oriental, Vegetables, Poultry, Chilies, Pasta
      Yield: 6 servings
 
      2 tb Peanut oil
    1/2 ts Salt
      3 cl Garlic; chopped fine
    1/4 ts Fresh grated ginger

MMMMM------------------------VEGETABLES-----------------------------
      6    Chinese dried mushrooms;
           - soaked for 2 hours, cut
           - in julienne
      1 c  Napa cabbage
    1/4 c  Dried lily buds; soaked for
           - one hour (opt)
      2 oz Dried bean curd skin; soaked
           - for one hour (opt)
    1/2 c  Bamboo shoots; julienned

MMMMM---------------------------SAUCE-------------------------------
      2 tb Foo yee
      1 tb Light soy sauce
    1/8 ts Sugar
      2 ts Sesame oil
    1/2 ts Ground white pepper
      1 ts Garlic & red chile paste; 
           - more to taste

MMMMM------------------------ADDITIONAL-----------------------------
      4 oz Cellophane noodles (sai
           - fun) soaked one hour
      2 c  Chicken stock
           Green onions; chopped
 
  Remember the basic rule for chowing: Have everything
  ready before you light the wok. Soak and prepare the
  vegetables, mix the sauce, and then go to it.  Heat
  the wok and add the oil, salt, garlic, and ginger.

  Chow for a moment and then add the vegetables. Chow
  until hot and tender and then add the sauce, the
  drained noodles, and the chicken stock to the wok.
  Stir and simmer uncovered until the noodles are clear
  and tender and have absorbed most of the broth.

  Taste for salt and place in a serving bowl. Garnish
  with green onions & serve.
