I don't use anything as a modifier unless referring to sweet potatoes or a
specific type of spud - like Yukon Gold or purple potatoes. Mostly, around
here, people refer to white taters - if they refer to them as more than just
potatoes as Idaho potatoes. Unless talking about red potatoes or "new"
otatoes.

Potatoes tend to be the starch of choice for most northern European cultures.

I was going to fire off a(n) S-A question about "what of Chinese or Japanese or
India potato salads?" Then this little voice in the back of my mind said --
"better look first".

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Chinese Potato Salad
 Categories: Salads, Potatoes, Pork, Sauces
      Yield: 8 servings

  2 1/2 lb Potatoes
      4 sl Bacon; crisped, crumbled
    3/4 c  Chopped bok choy
      1 lg Red bell pepper; diced
    1/2 c  Chopped green onion
    1/4 c  Chopped cilantro

MMMMM---------------------------SAUCE-------------------------------
  1 1/3 c  Mayonnaise
      1 ts Sugar
      1 tb Soy sauce
      2 ts Sesame oil
    1/4 ts Dry mustard; eg Colman's
    1/8 ts Salt

  Boil the potatoes until cooked but still firm. Cut into
  potato salad-sized chunks. Mix the ingredients for the sauce
  together, using more or less sesame oil and hot mustard
  according to taste (the more the better, up to a point...).

  Put all solid ingredients together in a large bowl, then add
  the sauce and mix well. Chill. 

  Makes 8 servings
