Hi Janis,

JK> Yes, I understand the southern states are getting very chilly if not
JK> horrific weather :( Well, it would be horrific to me if I was
 JK> expecting more moderate temps.

So much for global warming! Yesterday, Swansboro (on the coast where we
used to live) got 7" of snow; we didn't get a flake! Steve checked
Weather Underground about an hour ago; my folks were just below 0; his
siblings in western NY were just above.

JK> > temperatures have been below normal most of the time since late
JK> > November. Almost like a NY winter but in NC. We're really feeling
JK> it > in our bones.

JK> I can believe that.. it must be quite a shock to you both :( Hot soup,
JK> hot tea, lots of humidity in the air in the house may help some..
JK> Humid air is warmer, at least here. We can't stand it without 3
JK> humidifiers going in our bedroom (of course, that's the room with no
 JK> heat (g) ).

We've just started with adding extra humidity above what goes into the
air from showers, cooking etc. We're doing a lot of cooking of rib
sticking foods; Steve is on part 2 of a cold that I've been avoiding (so
far). He's really pushing the tea and I should drink more than I am.
I've got a cup cooling while I write this.

>> I think any brown rice takes about 45+ minutes, right? I'm sure short

JK> > Usaually about that in my rice cooker or stove top, doesn't seem to
JK> > matter which method I use. Just that the rice cooker is "set and
JK> forget" > but stove top takes a bit more fuss.

JK> Yes, it can.. but for me it's just a natural thing since I've never
 JK> owned a rice cooker.

I've had one since late 1998; this is my second one. When it dies, it
will be replaced with one that has a retractable cord.

JK> > That would be a big help! I won't be tied to the stove if I can stir
JK> it > frequwntly as opposed to constantly.

JK> Same here... I'd die if I could take break and go sit and check my
 JK> mail, etc. (g)

Or read for school sew, etc. Got to take my serger in for a tune up,
etc; I think the timing is off too.

JK> > that JK> when I'm really tired, I've been known to ignore it for a
JK> while > and JK> then come back and add that "next cup" of broth. :)
JK> Hence you > might JK> need a touch more broth.. but you don't want to

JK> > Good; it's a much better option than I was thinking. Michael made
JK> some > in 07 at Dale's but I wasn't especially paying attention to how

JK> Just make sure you keep the heat low enough so it doesn't evaporate
JK> really fast. That should help.. expect the first time to be a failure
 JK> (g).

Thanks for the "heads up" warning. I'll try about a "10 o'clock" setting
on the stove.

JK> > We picked up some collard greens today. They'll be cooked down
JK> tomorrow, > in the typical southern style, with ham hocks and lots of
JK> water. I'll be > putting some in the freezer for eating later. We're
 JK> also smoking the
JK> > free range turkey tomorrow; high temperature is supposed to be about

JK> That's neat :) I love turkey, and so does Ron. We've been known to
JK> do a few during the holiday period :) and after as well..

This one was good but not great. We'll go back to looking for the all
natural, no added brine/broth ones tho. They're a better value.

JK> > That's what I figured; the short grain should be close enough to
JK> real > arborio rice to cook the same way.

JK> Yes, it does.. as far as I can tell :)

Time to start experimenting then.

>> Now I know I once did find that brown arborio at wegmans.. it was in

JK> > I looked all over the Wegman's in Brockport; it's a good sized store
JK> looked > into the Whole Foods Market in Raleigh and the Fresh Market
JK> in Chapel > Hill without success.

 JK> Understand.. can be a pia :)

So I'll just use the short grain brown rice and call it close enough to
the real thing. Even the Italian store in Rochester (Olindo's) didn't
have it.

JK> > Not only my legs, but my wrists and left elbow would really be
JK> fussing > at me. The left wrist has been really achy this winter
JK> because of the > cold; makes it hard to do a lot of things.

JK> Yes, I can understand that one :( You must get some wicked
 JK> arthritis..

At times it's a major pain. There are spells when nothing but time helps
the pain to go away. Days I have class I try not to do a lot of other
hand work so the wrist won't get overworked before note taking time.

>> > BTW, we checked out the Italian deli in the area we'd been meaning
 JK> [...]
>> That sounds really great :) It is such a great thing when you find a
>> good local sausage. Interestingly, the best one we've found around
 JK> [...]
JK> > We always have fun exploring a new area; that was part of the fun of
JK> > Army moves. We'd seen the stores in passing on our way to other
JK> stores > but just not had the time or chance to stop in before. Now
JK> we've made it > to one, one more to check out.

JK> I can undersand how that would be fun with every move.. makes the move
 JK> certainly interesting :)

It also lets us know what's in the area to know if we can or can't get
some of our food favorites. Living in so many different places, we've
picked up favorite dishes or foods from each of them. It's fun to make
them in a new location and remember where we first tried them.

Catch you later,
