Rhythm can be worked on. True, there are many who are not
naturally gifted at it (yours truly for example), but it
is largely an acquired skill.

Taking a handicap and making an advantage of it!

I'm sure enough women have found that intriguing so that Shirley
might have been concerned at times.

If you'd wanted the parts enough, perhaps you'd have taken
lessons or something. At least practiced.

Indeed.

Pork Chops with Peppercorn Sauce
cat: main
servings: 3 or 6

6 lean pork chops
Herb seasoning (any will do)
2 Tb corn flour
20 g butter
1 clove garlic
4 Tb hua tiao wine
1 1/2 Tb peppercorns in brine, rinsed
- drained and lightly crushed
150 ml chicken stock
4 Tb creme fraiche, sub greek yogurt

Trim the chops of excess fat and marinate with some corn flour.
Sprinkle the herb seasoning on one side.

Heat some oil in a large frying pan on medium heat and fry the
chops with the seasoned side down. In the meantime, sprinkle
the seasoning on the other side as well. Fry the chops for
6-8 min on each side, until slightly golden brown. Remove
from the pan.

To make the sauce: Melt the butter in the pan and fry the
garlic for about 3 min. Stir in the wine and simmer for about
1 min. Add the peppercorns and stock, bring to the boil and
simmer for 2-3 min or until slightly reduced. Stir in the
creme fraiche, spoon the sauce over the chops and serve.
Since I did not have creme fraiche, I substituted it with
greek yogurt. Another alternative is sour cream.
