Instant noodles were considered to be the most important Japanese
invention of the 20th century.  Their initial purpose was to feed the
thousands of survivors of Hiroshima and Nagasaki bombings.  They were
cheap to produce, easy to transport, and only needed a small amount of
hot water to make a nutritious, life-saving meal.  And of course
impecunious uni students have been surviving on them ever since.

During my wanderings, working in the Pacific, I found them very
useful, as every tiny Chinese trade store has them permanently in
stock.  Other universal food ingredients they hold are canned corned
beef (usually "Ox and Palm" brand), canned Chinese "Spam", canned
"roast pork" and the strongly flavoured canned "Mackerel Pike in
Natural Oil", and of course, rice.

My custom was to cook the noodles in a saucepan, with the flavour
packet, for the specified 2 minutes, but with double the quantity of
water.   With some onions (trade store also) and spices and local
greens or other vegetables from the nearest native market, the corned
beef could be stir fried to a palatable mixture.  The noodles were
drained, saving the liquid in a mug for drinking, then the stir fry
was plopped on top of the noodles.  That produced a basic, but
satisfying 2 course meal of soup and main.

If I wanted a third course, that would be local fruit - banana,
pineapple, guava, mango, guyabano, pomelo, custard apple, etc.

      Title: RUJAK - SPICY FRUIT SALAD

    1/2    Pawpaw; papaya
    1/2    Pineapple
      1    Pomelo (see glossar: or
           ; sweet grapefruit
      1    Cucumbers
      2    Mangoes;slightly under-ripe
      2    Bananas
      2    Apples- Granny Smith
           ; BUMBU
      1 c  Peanuts; fried or roasted
      1 ts Blachan; grilled
    1/2    Bananas- plantain; chopped
      1 tb Lemon juice
      1 tb Sugar- brown
      1    Chillies- red;>3, chop
      1 tb Tamarind water; >2tb
           Salt
           Black pepper
 
  This was a huge favourite of mine in the mountain village of Bukit
  Tinggi. Every morning I would sit and watch as the warung owner
  ground up the bumbu to order then served the salad on a fresh banana
  leaf. I would gobble down the fruit before the chilli began to hit
  me, then head down to the market fired up for yet another lesson in
  haggling.
  
  To make the bumbu, grind the peanuts, shrimp paste, banana, lemon
  juice, sugar and chillies to a coarse paste in a mortar, or blend in
  a food processor or blender. thin out with the tamarind water until
  the.paste is the consistency of a very thick sauce - the occasional
  crunch of peanut adds to the texture. season to taste with salt and
  pepper.
  
  To assemble the salad, slice the fruit toss in the bumbu and serve.
