Commonly known as part of the schoolyard bullies - or, conversely, the 
sewer sharks (according to Ross Sauer). They typically equate smarts, 
couth, taste, and good sense with who has the biggest pile of chink.

So, they worship money, more than most. They just don't like being 
reminded of the fact.

There is a difference between a fish patty/stick and a, say, Filet-O-
Fish portion. The fish stick/patty is "chopped and formed" into exact 
weight/dimension/configuration and then breaded/battered.

McDonald's (and Long John's) cut their filets from the whole fish in 
appropriate sized pieces. The McD's is breaded and frozen for cooking at
the individual store. Long John's is frozen and delivered to the store 
where it will be battered or breaded and deep fried or baked.

Mrs. Paul's, Gortons, etc. are as you describe - chopped and formed, 
like Spam, luncheon meats, or Arby's roast beast, or turkey loaf.

One of my pet peeves is that walleye is wildly popular around here. But,
one *damned* seldom gets real walleye ... The walleye is considered by 
many to be the pinnacle of freshwater fish with respect to culinary 
taste and texture. In North America, walleye are fervently fished both 
recreationally and commercially for food. Because of its nocturnal 
feeding habits walleye can be caught at night throughout the summer and 
autumn months. Most commercial fisheries for walleye are situated in the
Canadian waters of the Great Lakes, but there are other locations as 
well.

But, if all the fish served as walleye on a single AYCE Friday were 
truly walleye - there would be no fish left in the water to reproduce 
more walleye. Rather much of what is sold as "walleye" is whiting or 
pollock or other similarly flabby white-fleshed fish.

Here is one of my favourite fishy dishes ...

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Dave's Fish Parmesan
 Categories: Seafood, Cheese, Sauces, Mushrooms
      Yield: 8 Servings
 
      2 lb Fish filets or steaks
     26 oz Jar Onofrio's Basilico sauce
           - or Marinara sauce *
           Salt & fresh black pepper
      1 lb Mozzarella or Provolone;
           - sliced or shredded
      1 lb Crimini/Swiss Brown button
           - mushrooms, cleaned, sliced
           - reserving 8 buttons
           Fresh grated or shaved
           - Parmesan cheese
      8 tb Butter; melted
 
  Preheat oven to 425oF/220oC.
  
  Spread a thin layer of sauce over bottom of baking dish
  place a layer of firm whitefish filets on the sauce. Salt
  and pepper the fish. Sprinkle some sliced mushrooms over
  fish and place cheese in a layer over the mushrooms.
  Spread a layer of sauce over the cheese and repeat the
  fish, mushroom, cheese layers until the baking dish is
  near full or you run out of fish.
  
  Top the last layer with cheese, the remaining sauce in
  the jar and the 8 reserved mushroom buttons. Grate or
  shave Parmesan over until you are ashamed of yourself or
  until you run out of cheese.
  
  Drizzle the melted butter over the cheese and bake until
  fish is done - 15 to 20 minutes

  Prego, Classico, etc.
  
  I like the addition of the basil in the Basilico sauce. If
  you don't care for basil with your fish use the straight
  marinara. - UDD
