That is a sin, to so discard such a flavoursome morsel.

I have a soft spot for those little, lumpy cucumbers used for
gherkins, as the very first design job I did as a cadet design
draftsman in the Electricity Trust of SA was a gherkin grader for a
pickle manufacturer.  Basically two counter-rotating, diverging
rollers, with bins beneath.  It worked, without bruising the precious
fruit; I was so proud!

There is also a tall building which was erected recently in London,
the most polite of its nicknames being "the Giant Gherkin".

      Title: Potato Salad With Gherkin And Red Pepper
 Categories: Sides, Salads, Spanish, Euro-w
      Yield: 7 servings
 
      7 md Potatoes; 1.4kg, unpeeled,
           -quartered
      1 lg Red onion; sliced
      1 c  Seeded green olives
    3/4 c  Small gherkins
      1 md Capsicum- red; chopped
           ; HERB DRESSING
     80 ml Olive oil
     60 ml Lemon juice
      2 T  Red wine vinegar
      2 T  Fresh mint leaves
      2 T  Fresh oregano leaves
      2    Garlic cloves; crushed
 
  1. Boil, steam or microwave potatoes until just tender. Drain
  potatoes, spread out on absorbent paper to dry.
  
  2. Combine potatoes with remaining ingredients and Herb Dressing in
  large bowl just before serving.
  
  3. Herb Dressing: Combine all ingredients in jar; shake well. Serves
  6 to 8.
  
  Potato Salad and Herb Dressing can be made 3 hours ahead. Storage:
  Covered, separately, in refrigerator. Freeze: Not suitable.
  Microwave: Suitable.
