-=> Quoting Michael Loo to Glen Jamieson <=-

GJ> Down below seems to be nearly all shops. When I first went to
GJ> Singapore, in 1970, Bugis Street was very much the seamy side of
GJ> Singapore, but then Lee Kwan Yew cleaned it up, and got rid of the
GJ> parading transexuals, drug dealers, etc, etc. (Boring!)

ML> Now you can get the sexual release and/or mind expansion that
ML> you need, only the delivery systems are highly regulated, and
ML> the modalities are limited to heterosexual and alcoholic.
ML> Makes it easy to maintain public order and (relative) health.

It also makes more money for the government. I only know about the
charges for excise on imported alcohol, which are quite high there,
doubling the price of a bottle of quaffing red wine.

GJ> That is well into the Colonial District. The closest I have ever got
GJ> to Orchard Road is just around the corner in the Phoenix, where I
 GJ> stayed with 4 female in-laws.

ML> I wonder what the management thought you were.

I think they may have been a bit puzzled, but made no comments.
There were actually 2 Filipina sisters-in-law and 1 female Danish
friend of one of them, and my niece-in-law, Nora, who has been my
travelling companion on other occasions. The first 3 shared one room,
and Nora and I, the other. The others all filled a taxi from the
airport, while took the MRT. They got to the hotel first, and when I
found them they were about to dine in the hotel dining room. I
managed to get them away from there and into a cheap basement eatery,
just in time.

It was interesting to see the contrast between the orderly,
disciplined Singaporeans and the far more relaxed Filipinas,
particularly on the escalators, where the locals either stood on the
left side or ran up the right side, but the Flips tended to drape
themselves across the whole width of the escalator, not noticing they
were blocking the path of the runners, who would politely queue up
behind them, until Nora or I reminded her aunts to move to the left.
And the aunts would tend to forget to swipe their bus tickets on
leaving the bus, which caused confusion the next time they got on a
bus. Later there were other complications, with one of them getting
lost going to the airport toilet just as we were about to return to
Manila, and the Dane not being allowed to board the PAL plane because
she didn't have her ticket from Manila back to Copenhagen with her.
All settled at the last moment.

GJ> The Sheraton is waaaaaay out in the peace and quiet of the wide open
 GJ> spaces.

ML> Way out being one or two bus stops north of Orchard, perhaps
ML> half a mile (more likely less).

By Singapore standards that is "way out".

GJ> intend to visit Vietnam to try the cuisine at its origin
ML> I'm sure in Vietnam they don't eat tasteless farmed barramundi.

If they do, I'm sure they will have found a way to make it tasty.

GJ> will have to wait until my undercarriage has been repaired. While
GJ> that is being done I will be absent from the Echo for about a week.
ML> What's the procedure being done?

The cartilage in the ball joint at the top of my left femur has
disappeared, and the end of the bone has started wearing away, so my
leg is getting shorter. Also, it hurts. As I have never stayed in a
hospital in Australia overnight, or had a major operation, I have been
"boning up" on the operational and post-op procedures and hospital
lore. I even spoke to Kevin's father, who has had 3 hip replacements
(and you wonder why Kevin is a bit odd?). He said he woke up during
one of his, to see the doctor wielding a small circular saw to cut off
the end of his femur, which was poking out of the incision. Then his
anaesthetist noticed him blink, and upped the dose.

I spoke to a nurse who gave me lots of information, and asked her if I
could keep the cut-off end of my femur as a souvenir or paper-weight,
but she made horrified noises and said it would be destroyed. I will
have to speak to the surgeon, as after all, it is part of me; I grew
it! I also asked about a video of the operation, but she said I would
have to look on the Internet for something like that. She also said I
would be given blood thinning pills or an injection during, and for a
while after the operation, but I said I would prefer red wine. We may
be able to come to a compromise in that.

-=> Glen Jamieson said to Jim Weller <=-

GJ> Why the candles, instead of a battery torch? Do torch batteries fail
GJ> when deeply frozen? Or do you use the candles for warmth?

 ML> Yes. Yes.

I know what Jimm needs. I have a small torch which I bought years ago
in Singapore that operates when it is squeezed repeatedly. It would
give him light, and the exercise would warm him. :)

MMMMM----- Recipe via Meal-Master (tm) v8.05

      Title: Singapore Chilli Crab
Categories: Mains, Seafoods, Singaporean, Asia-se, Charmaine
      Yield: 3 servings

      2 md Crabs
    125 ml Peanut oil
      2 ts Finely grated ginger
      1 ts Finely chopped garlic
      3 Red chillies; seed/chop
      3 tb Tomato ketchup
      3 tb Hot chilli sauce
      1 tb Sugar

Scrub away any mossy patches on the crabs, Remove hard top shell,

  on size.

Heat a wok and add oil. When hot fry the crab pieces until they change
colour, turning them so they cook on all sides. Remove to a plate.
Turn heat low and fry the ginger, garlic and chillies, stirring
constantly, until they are soft and smell fragrant bu do not let them
brown. Add the tomato ketchup, chilli sauce, sugar, soy sauce and
salt. Bring to the boil, then return crabs to the wok and simmer in
the sauce for 3 minutes. If sauce reduces too much add a very little
  water. Serve with rice.
