MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Regular Baladi Bread  (Pocket Bread)

      Yield: 1 servings
 
      2 pk Dry active yeast
    1/2 c  Water, warm
      1 ts Salt
  1 1/2 lb Unbleached flour, PLUS
  1 1/2 lb Wheat flour, mixed together
      1 ts Sugar
           -water, as needed
           -bran
           -milk
 
  In a mixing bowl, dissolve the yeast in the 1/2 cup of water.  Add the
  salt and then the sugar and dissolve.
  
  Next add the mixed flours and water, 1 cup at a time, and knead well.
  Add water again and continue to kneading until the dough is gathered
  and a very soft ball.  Cover and let rise in a warm place for 2 hours.
  
  Cut pieces of foil paper into 12- by 9-inch rectangles and spread with
  bran.  Divide the dough into 16 equal pieces.  Put 2  of the pieces on
  one of the foil pieces and using a rolling pin form the dough into
  round loafs, about 3/8-inch thick (1 centimeter).
  
  When all the pieces are formed into round loaf, cover them with a
  large table cloth and let them rise again for 1 hour.
  
  Preheat the oven to 500 degree F. for 10 minutes.
  
  Place 2 loafs, without removing them from the foil, on the back of a
  thick oven pan (or any thick pan).  Bake for 5 minutes.  Remove the
  pan from the oven and brush the top of each loaf with milk.  Place
  the pan on the middle rack to brown the tops of the bread for 2
  minutes only. Remove from the oven and repeat with the other loafs
  until all 16 loaf are baked.  Allow them to cool.
  
  When cool, put the loafs in plastic bags and freeze them until they
  are needed.  To serve, put the frozen loaves in the oven for a few
  minutes until they are fresh again.
  
  Makes 16 round loafs.
