Our hours are from 11 AM to 1 AM which is sufficient for most
people. Although when I worked a midnight shift in Ottawa I was
pleased that Quebec bars were open at 8 AM. It gave me somewhere to
go on payday while I waited for the bank to open at 10.

Drinking at 8 AM in a dive bar is a surreal experience. Most of the
people there were jovial shift workers having a quick social drink
or two at the end of the work day. But then there were the hard
core. They'd come in, belly up to the bar and not say a word. The
bartender would rush over with three quart bottles of beer (two open
and one with the cap on). Customer would guzzle one, then say good
morning and pay for the drinks, sip the second one quickly while
watching the clock, put the third (unopened) one in his briefcase
and leave for work down the street at 8:59. And he'd be back at noon
for three more, two opened and one capped.

  Servings: 1

      2 oz Irish whiskey
      1 oz Lillet Blanc
      1 ts Cointreau
      2 ds orange bitters
           lemon peel, for garnish

Combine ingredients in a mixing glass and fill with ice. Stir until
well chilled, about 30 seconds. Strain into chilled cocktail glass.
Twist thin strip of lemon peel above drink and use as garnish.
