Definitely that... sadly...

I've used pineapple, that's a similar texture cooked... I've considered
pear, as that is usually my substitute for apple for just about
anything.  Grape juice (white) also subs for apple juice.  Water
chestnuts would probably only sorta work for raw apples in a salad,
probably the same for jicama, although I don't know as I've had that
cooked, so don't know how/if the texture changes with cooking...

I forget, is the new crockpot larger or smaller than the old one...? 
Adjusting down could be a little bit of a trick, but for a larger one,
one should be able to just use the accustomed amounts and then add a
little at a time to get the right look and taste... ;)
