Contains two recipes ...

In several of the David Pileggi recipes I just posted there is a call for
"avish" which is supposedly not available in America.

Well, I took that as a challenge - so, I went Googling. And got, basically,
bupkes. I found a bunch of Indian spice merchants with "Avish" in their
business names. But, no Ethiopian/Sephardic/African spices by that name so that
I could find a substitute/close copy.

Google asked if I meant "abish" so I took that path also. Closest it came was
an Ethiopian spice company which defines "ABISH" as powdered fenugreek ...
which I can get here, or make in my R2D2 grinder.

I also found this nice recipe from Uncle Phaedrus ...

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Abish
 Categories: African, Beef, Cheese, Herbs
      Yield: 6 servings

      4 oz (fl oz) vegetable oil
      1 lg Onion; diced
      1 tb Grated root ginger
      1 tb Fine chopped garlic
      2 lg Tomatoes; seeded, diced
      1 lb Lean minced beef
           Salt
      3 lg Eggs; beaten
      1 tb Turmeric
      1 tb Butter
           +=WITH=+
      1 tb Chopped parsley
           Extra parsley; garnish
      8 oz Goat's cheese; grated (opt)

  Heat oil in pan and sauté onion until golden. Stir in
  ginger, garlic, tomatoes, minced beef and salt. Cook
  on low 15 - 20 min., stirring regularly to prevent
  burning. 

  Combine eggs with mixture in pan and cook 10 min.
  Remove from heat. 

  Add turmeric and seasoned butter and top with parsley
  and cheese. 

  Serve with rice or fresh bread, mix with steamed corn
  and eat all together, or use it to stuff other vegetables.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Berbere
 Categories: Spices, Chilies
      Yield: 1 cup

    1/2 c  Ground red pepper (cayenne)
    1/3 c  Paprika
      1 ts Seasoned salt (Lawry's?)
      1 ts Poultry seasoning
    1/2 ts Ground ginger
    1/2 ts Garlic powder
    1/2 ts Ground fenugreek
    1/2 ts Ground cardamom seeds
    1/2 ts Ground nutmeg
    1/8 ts Ground cloves
    1/8 ts Ground allspice 

  Preheat oven to 300øF/150øC.

  In a cake pan, mix the spices well (be careful not to
  inhale).

  Roast for 20 minutes, stirring every 5 minutes to prevent
  scorching.
  
  Watch carefully, and stir the spices more often during the
  last 10 minutes.
  
  Cool and store in a sealed container in the refrigerator
  or freezer.
