Chicken fat, butter or bacon grease -- I agree on the margarine.  Not
many are fit to cook with, nor do we buy them anymore.  Back when we did
I think that Imperial was supposed to be the better one to cook with.
Don't know how long it has been since Gail returned to just using butter
for everything.

Believe it or not -- that was not a factor in selecting the recipe, but
I did notice that it was there.  Sounds strange to me.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Grilled Catfish  Cajun - Style - SL 6/90
 Categories: Main dish, Catfish, Cajun, Sthrn/livng, Grill
      Yield: 4 Servings
 
      1 ts Lemon-pepper seasoning
      1 ts White pepper
      1 ts Creole seasoning
      1 ts Blackened fish seasoning
      2 tb Lemon juice
      4    Catfish fillets (1-1/3 lbs)
           Vegetable cooking spray
           Garnishes: lemon wedges,
           -celery tops
 
  :    Combine first 4 ingredients in a small bowl.  Sprinkle lemon
  juice and seasoning mixture on both sides of fish.
  :    Spray a wire fish basket with cooking spray; place fish in
  basket. Grillfish, covered, over medium coals (400F) for 7 to 10
  minutes on each side or until fish flakes easily when tested with a
  fork. :    Remove fish from basket; place on a serving platter.
  Garnish, if desired.  Yield: 4 servings.
