 DS> Did you skate in the canals in Ottawa?

No. I played hockey on outdoor rinks in the country when I was a
kid. One spot was a beaver pond about half a mile behind our house.
But I had hung up my skates by the time I moved to Ottawa.

 DS> What did they do to remove the snow cover from the ice?   

Pick up trucks, quads and light tractors with snow plow blades.

     Title: Chocolate Roulade With Griottines

  Servings: 6

      3    Egg whites
    1/4 c  Sugar 
      6    Egg yolks
    1/2 c  Flour 
      2 ts Cocoa powder 
    200 g  whipping cream 
    1/3 c  Caster sugar
           Vanilla extract: few drops
           Griottines(R) Original

Griottines and cream encased in a chocolate sponge roll oozing with
appeal. Grittines are delicious little cherries macerated in kirsch
or brandy or something delicious.

1. Preheat the oven to 200C (Gas Mark 6). Grease and line a Swiss
roll tin measuring approx 30cm x 20cm with baking parchment.

2. Whisk egg white, gently fold in sugar, add egg yolk and mix. Fold
in sieved flour and cocoa powder to combine.

3. Tip into the prepared tin and shake to level it. Place in the
oven for approx 12 mins, until the sponge is slightly risen and just
firm to the touch. The top should be dry.

4. Place a sheet of baking parchment on your work surface and
carefully invert the cake onto the paper. Remove the paper from the
base of the roulade and discard. Roll up in the fresh paper from the
short end and cool completely until ready to fill and serve.

5. Drain the cherries in a sieve over a bowl. Whip the cream until
just starting to thicken. Unroll the roulade, discard the paper and
spread the cream evenly over the surface, leaving a 2cm gap all the
way around the edge. Add the Griottines and re-roll the roulade
(don't worry if it cracks a little).

6. Present on a plate topped with Griottines.
