MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Lemon Blueberry Fans
 Categories: Pastry, Snacks, Cookies, Fruits, Citrus
      Yield: 54 servings

      1 c  Butter; softened
      3 oz Pkg cream cheese; softened
      1 c  Granulated sugar
    1/4 ts Salt
      1 ts Fine shredded lemon peel
      1 ts Vanilla
    1/2 ts Lemon extract
      2 tb Cornstarch
  2 1/2 c  All-purpose flour
    2/3 c  Blueberry or raspberry jam
           - or preserves
           Finely shredded lemon peel
           - (opt)

  In a very large bowl, combine butter and cream cheese.
  Beat with an electric mixer on medium to high speed for 30
  seconds. Add granulated sugar and salt. Beat until light
  and fluffy, scraping side of bowl occasionally. Beat in
  the 1 teaspoon lemon peel, the vanilla, and lemon extract
  until combined. Beat in cornstarch. Beat in as much of the
  flour as you can with the mixer. Using a wooden spoon,
  stir in any remaining flour. Divide dough in half. Cover
  and chill for 1 to 2 hours or until dough is easy to
  handle.

  Preheat oven to 375øF/190øC.

  On a lightly floured surface, roll out one of the dough
  portions to an 1/8" thickness. Using a round 2-1/2" cookie
  cutter, cut out dough. Place dough rounds 1 inch apart on
  an ungreased cookie sheet.

  Spoon 1/2 teaspoon of the jam onto the center of each
  round. To shape fans, bring opposite sides of each dough
  circle up over the jam and pinch them together where they
  meet, forming a point at one end.

  Bake in the preheated oven for 8 to 10 minutes or until
  edges are lightly browned. Cool on cookie sheet for 1
  minute. Transfer cookies to a wire rack; let cool. Repeat
  with the remaining dough portions. If desired, sprinkle
  cookies with additional lemon peel before serving.

  Makes about 54 cookies.

  To Store: Layer cookies between waxed paper in an airtight
  container; cover. Store in the refrigerator for up to 3
  days or freeze for up to 1 month.

      Title: Coconut-Raspberry Delights
 Categories: Cookies, Snacks, Fruits
      Yield: 40 servings

      7 oz Pkg flaked coconut
    2/3 c  Sugar
    1/3 c  All-purpose flour
    1/4 ts Salt
      3    Egg whites; slightly beaten
    1/2 ts Almond extract
      4 oz Chocolate-flavor candy
           - coating; chopped
    1/4 c  Seedless raspberry jam or
           - preserves

  Preheat oven to 325øF/163øC.

  Line cookie sheets with parchment paper; set aside.

  In a medium bowl, stir together coconut, sugar, flour, and
  salt. Stir in egg whites and almond extract. Drop coconut
  mixture by teaspoons 1 inch apart onto prepared cookie
  sheets, making 3/4- to 1-inch mounds. Lightly flour your
  thumb and press into the center of each mound to make an
  indentation.

  Bake in preheated oven about 20 minutes or until edges are
  golden. If necessary, use the rounded side of a teaspoon
  to press indentations again. Cool cookies completely on
  cookie sheets. Carefully remove cookies from cookie
  sheets.

  In a heavy small saucepan, heat and stir candy coating
  over low heat until melted. Carefully dip the bottom of
  each cooled cookie into the melted candy coating, letting
  excess drip off. Place cookies, candy coating sides up, on
  parchment paper or waxed paper; let stand about 30 minutes
  or until candy coating sets.

  To fill cookies, just before serving, spoon about 1/4
  teaspoon of the preserves into the indentation in each
  cookie.

  Makes about 40 cookies.

  From the Test Kitchen: Layer unfilled cookies between
  pieces of waxed paper in an airtight container; cover.
  Store in the refrigerator for up 1 week or freeze for up
  to 3 months. Thaw cookies, if frozen. Fill as directed in
  last step.
