      Title: Apple & Fruit Pie

      Yield: 6 servings
 
      2 c  All-purpose flour
    1/2 ts Salt
    2/3 c  Shortening
      6 tb (to 7 tb) cold water
    2/3 c  (to 3/4 c) sugar
      2 tb All-purpose flour
    3/4 ts Ground cinnamon
        ds Ground nutmeg
      6 md (to 8 md) apples; peeled,
           Sliced (7-1/2 cups)
    1/4 c  Dried cranberries, cherries,
           Snipped dried apricots, figs
           Or raisins
      2 tb Butter
           Milk
           Sugar
 
  For pastry, stir together 2 cups all-purpose flour and salt
  in a medium bowl. Using a pastry blender, cut in shortening
  until pieces are the size of small peas. Sprinkle 1
  tablespoon cold water over part of mixture, then gently toss
  with a fork. Push to side of the bowl. Repeat, using more
  water, 1 tablespoon at a time, until all is moistened.
  Divide dough in half. Form each half into a ball.
  
  On a lightly floured surface, flatten one ball of dough with
  your hands. Using a rolling pin, roll dough from the center
  to the edge, forming a circle about 12 inches in diameter.
  Transfer pastry to a 9-inch pie plate. Carefully ease pastry
  into pie plate, being careful not to stretch it. Roll out
  remaining ball of dough to a 12-inch circle.
  
  For filling, stir together sugar, 2 tablespoons all-purpose
  flour, cinnamon, and nutmeg in a large bowl. Add apples and
  dried fruit, if desired; toss to coat. If apples lack
  tartness, add 1 tablespoon lemon juice. Transfer apple
  mixture to pastry-lined pie plate. Trim bottom pastry to the
  edge of pie plate. Cut butter into small pieces; place on
  top of apples.
  
  Make decorative cutouts in top crust to allow steam to
  escape. Place top crust on filling. Trim to 1/2 inch beyond
  edge of pie plate. Fold top crust under bottom crust; seal
  and flute as desired. Brush top crust with milk and sprinkle
  lightly with sugar. Cover edge of pie with foil to prevent
  overbrowning.
  
  Bake in a 375øF/190øC oven for 30 minutes. Remove foil. Bake
  20 to 25 minutes more or until top is golden. Cool on wire
  rack. Cover and refrigerate any leftovers, and use within 2
  days.
  
  Makes 8 servings.
  
  Make-ahead tip: Prepare and bake pie. Cool. Cover and chill
  up to 2 days.

      Title: Harvest Pie

      Yield: 6 servings
 
           Piecrust for 9" double crust
           - pie
  1 1/2 lb Tart apples; peeled, cored,
           - sliced
      1 lb Pears, peeled, cored,
           - sliced
    1/2 c  Dried cherries
    2/3 c  + 1 tb sugar
    1/3 c  Sliced natural almonds
    1/4 c  All-purpose flour
      1 ts Ground cinnamon
    1/4 ts Ground nutmeg
    1/4 ts Salt
      1    Egg lightly beaten
           +=WITH=+
      1 tb Water
 
  Heat oven to 400øF/205øC. Fit 1 piecrust into a 9" pie plate
  and refrigerate until ready to fill.
  
  In a large bowl, gently mix together apples, pears,
  cherries, 2/3 cup of the sugar, the almonds, flour,
  cinnamon, nutmeg and salt. Pour into prepared piecrust.
  
  Roll out second piecrust and cut out 6 evenly spaced circles
  or other desired shape with a 1-inch cookie cutter,
  reserving cut-outs.
  
  Place piecrust over filling and pinch top and bottom edges
  together. Brush lightly with egg wash and place cut-outs
  randomly over crust. Brush cut-outs with egg wash. Sprinkle
  remaining 1 tablespoon sugar over pie.
  
  Bake at 400øF/205øC for 20 minutes. Cover edges with
  aluminum foil and reduce heat to 350øF/175øC. Bake for an
  additional 35 minutes or until nicely browned and bubbly.
  
  Cool pie completely on wire rack.
