      Title: Sesame Date Bars
 Categories: Fruits, Nuts, Cookies, Desserts
      Yield: 15 servings
 
    1/2 c  All-purpose flour
      1 ts Cinnamon
    3/4 ts Baking powder
    1/8 ts Salt
  2 1/2 c  Soft pitted dates; chopped
    1/2 c  Whole almonds; toasted,
           - chopped
    1/3 c  Sesame seeds, toasted,
           - divided
      8 tb Unsalted butter; melted,
           - cooled slightly
    1/2 c  Packed light brown sugar
      2 lg Eggs
      1 ts Pure vanilla extract
 
  These crunchy, almond-filled date bars make for a sweet snack or
  dessert and can withstand cold, heat, and being stuffed into a
  backpack or pocket.
  
  * Preheat oven to 375|F with rack in middle position.
  
  * Line a 9-inch square metal baking pan with foil, then butter and
  flour foil, knocking out excess flour.
  
  * Sift together flour, cinnamon, baking powder, and salt into a large
  bowl. Add dates and toss with your fingers until well coated. Add
  almonds and all but 2 Tbsp sesame seeds and toss until combined.
  
  * Whisk together butter, brown sugar, eggs, and vanilla in a small
  bowl, then stir into date mixture. Pour into baking pan, smoothing
  top, and sprinkle with remaining 2 Tbsp sesame seeds.
  
  * Bake until golden and edges begin to pull away from sides of pan,
  25 to 30 minutes. Cool in pan 10 minutes, then lift from pan using
  foil and peel off foil. Cool completely before cutting into bars.
  
  COOKS' NOTE: Bars can be made 3 days ahead and kept, layered between
  sheets of wax paper in an airtight container, at room temperature.

      Title: Coffee Crunch Bars

      Yield: 48 servings
 
      2 c  All purpose flour
    1/2 ts Baking powder
    1/4 ts Salt
      1 c  + 2 tb unsalted butter; room
           - temp
  1 1/4 c  (firm packed) dark brown
           - sugar
      2 tb Instant espresso powder
    1/2 ts Almond extract
      1 c  Semisweet chocolate chips
    1/2 c  Sliced almonds
 
  The coffee and toffee flavors of this crunchy dessert are heightened
  by the dark brown sugar and espresso powder. This version is an
  adaptation of Leah ReichAs recipe, which was a variation on her
  grandmotherAs recipe.
  
  Preheat oven to 325XF. Whisk first 3 ingredients in medium bowl to
  blend.
  
  Using electric mixer, beat butter and sugar in another medium bowl
  until blended, about 2 minutes. Add espresso powder and almond
  extract; beat 1 minute. Stir in flour mixture in 3 additions, mixing
  until just absorbed after each addition. Stir in chocolate chips and
  almonds (dough will be thick).
  
  Turn dough out onto ungreased rimmed baking sheet. Using hands, press
  dough into 12-inch square. Pierce all over with fork at 1-inch
  intervals.
  
  Bake until edges are lightly browned and beginning to crisp, 45 to 50
  minutes. Cool on sheet 1 minute. Cut into 48 bars. Immediately
  transfer to rack; cool (bars will crisp as they cool).
  
  DO AHEAD: Can be made 5 days ahead. Store in airtight container at
  room temperature.
