MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Flank Steak Fajitas

      Yield: 4 Servings

    3/4 lb Marinated flank steak
      2 c  Chopped tomatoes
    1/4 c  Fine chopped red onion
      1 tb Chopped fresh cilantro
      1 tb Olive oil
      2    Dark-skinned Haas avocadoes;
           - med/small, peeled, seeded
      1 ts Hot pepper sauce
      1 sm Clove garlic; chopped
      1 ts Fresh lemon juice; to taste
           Salt & pepper
      8    Flour tortillas

  Preheat a broiler for 20 minutes (a superhot oven helps
  sear the meat quickly, sealing in juices). Use a rack in a
  foil-lined broiler pan. Spray the rack with vegetable
  spray and put the marinated steak on it. Cook in the
  broiler for 5 minutes. Turn the steak and cook another 5
  minutes. Don't overcook; the center should be rare.

  While the steak is cooking, toss together the tomatoes,
  red onion, cilantro and olive oil. Salt and pepper to
  taste. Set aside. In a small bowl, mash together with a
  fork the avocado, hot pepper sauce, garlic and lemon juice
  until smooth. Salt and pepper, to taste.

  When the steak is cooked, transfer it to a cutting board
  and cover lightly with foil.

  Set a heavy skillet over medium-high heat. When hot, put
  in the tortillas one at a time. Turn with tongs several
  times until hot. (You also may heat tortillas in the oven
  by enclosing them, flat, in foil and warming them at 350
  degrees for about 10 minutes.) Cover the tortillas with a
  tea towel till ready to use. Cut the steak into thin
  strips. Put the meat on a large platter along with the
  bowls of mashed avocado and tomato-onion mix.

  To serve, pass the heated tortillas and the platter. Each
  person spreads a tortilla with the avocado mixture, then
  adds steak strips. Finish with the tomato-onion mixture,
  or continue with such additions as chopped lettuce,
  grilled onions or roasted red pepper strips. Roll up or
  fold to eat.

  Serves 4.
