A trend that should have been remedied long ago.

Back when they wrote the cookbooks I learned from,
cans were pretty standard, and you knew what you
were getting whether it be from a #2 or a #303 (how
did that numbering system come into being, anyhow?)

Now, the pint has become a 15 3/4 oz, down to 15
and sometimes even 13 now. Where were the Consumer
Reports and other advocates when this happened?

Yeah, I kind of understand that - and sympathize. 

Balinese Roasted Chicken
cat: Indonesian, poultry, main, spicy
servings: 6

2 in fresh ginger, peeled and coarsely chopped
3/4 c coarsely chopped shallots
10 md cloves garlic, peeled and halved
3 sm red Thai chiles or serranos, coarsely chopped
2 ts ground turmeric
2 Tb coconut oil
6 chicken thighs
6 chicken drumsticks
4 md limes, quartered
6 fresh wild lime leaves
Kosher salt and freshly ground black pepper
fresh parsley leaves for garnish

Combine the garlic, ginger, shallots, chiles, and
turmeric in a food processor and pulse until the
mixture is finely chopped.

Melt the coconut oil in a 10" to 12" heavy frying
pan over medium heat. Add the chile mixture and
cook, stirring frequently, until fragrant and
softened, about 2 min. Remove the pan from heat
and let cool completely.

Place the chicken pieces in a 3-qt baking dish.
Squeeze the limes over the chicken and toss to
coat. Add the cooked chile mixture, the whole
lime leaves, 2 ts salt, and 1/2 ts pepper, and
using your hands, rub the mixture into the
chicken until well coated. Cover the dish with
plastic wrap and marinate in the refrigerator
3 hr to overnight. (tip, If you don't want your
hands yellowed from the turmeric, wear gloves)

Remove the chicken from the refrigerator and let
stand at room temperature for 30 min.

Arrange a rack in the top third of the oven and
heat the oven to 350F. Bake the chicken,
uncovered, until tender and an instant read
thermometer inserted into the center of a thigh
(without touching the bone) registers 180F.
Remove from the oven and let stand 10 min.
Remove the lime leaves and garnish with parsley
leaves before serving.
