From what I'm gleaning from this discussion, but it
appears that the CPI is useful enough as a tool for
those who know its components and reasoning - for
others, it can be a bit misleading.

True enough. Or meat cakes, for that matter, my favorite
kind (except for cheesecake, which mostly I have to
admire from afar).

The only rou bing I am familiar with is steamed ground pork,
flavored with an overlay of something strong-flavored, usually
salt fish, salt egg, or the exceptionally delicious fatty
dried pork sausage.

Shreds are "si." There is usually fish in xian yu rou bing,
which really means salty fish pig cake.

Oh, I see what you meant. Unless she was quite mixed up, she
was referring not to "xian yu" but "yu xiang," with the the
"yu" part rather like "ye" but with the lips pouting out
rather like a fish; "xian" sounds like "shien," whereas what
is transliterated "xiang" sounds like "shyong" (one syllable).

Sweet and sour rissoles
cat: Italian, snack, rather odd
servings: 4

11 oz lean boiled meat
2 egg whites
1 roll
4 oz milk
salt
breadcrumbs
butter
2 egg yolks
2 Tb sugar
2 Tb balsamic vinegar

Mince meat and mix it with egg whites. Soak the roll in the milk and
squeeze out the milk. Add the roll to the meat mixture. Season to taste.

Form meat cakes out of this mixture, roll them in breadcrumbs, and cook
them in melted butter until brown on both sides.

Meanwhile, beat egg yolks with sugar. Gradually add the vinegar and beat
to a creamy consistency. Pour this over the meat cakes and immediately
remove from heat.
