Ärende: Mother's day dinner was: Easter dinner
===============================================
Hi Nancy,

 NB> NB>> Beef stew's nice too.. :)

RH> All enjoyed it and we put a bit into the freezer for Dad to have
 RH> another time.

 NB> He'll enjoy it. :)

Even tho it's based on what Mom used to make, it has my own twists to
it. He didn't object to them the other night (more onion, some mushrooms
& tomato sauce added, also various herbs & spices Mom doesn't use). My
brothers scarfed down a good bit of it as well.

NB> NB>> As to the Mother's Day meal at church... :) There were two
NB> large NB>> heaps of baked marinated chicken breast meat, and a
NB> smaller single NB>> heap of chicken thighs, made with the same
NB> marinade. As I prefer dark NB>> meat, all I tried was thigh meat,
NB> which was quite good. Also on the

RH> I'd have gone for the breast meat. What was it marinaded in?

NB> I know... you like the white meat... and I much prefer dark... ;)
NB> Dunno what the marinade was... there was some rumor that it was a
NB> salad dressing, like Caesar dressing, but I don't know if it was
 NB> prepared or
NB> if Eric made it up from scratch... Had little flecks of red on the
NB> outside of the chicken, anyway... ;)

Possibly Italian dressing?

NB> NB>> table were mashed potatoes, white rice, corn, peas, and a nice
NB> NB>> broccoli dish. There was also a tray of little hors d'oeuvres,
NB> NB>> totally homemade by one of our young single men... a little
NB> shell NB>> with pesto filling topped with a sprig of something, a
 NB> slice of
NB> NB>> cherry tomato and a sliver of maybe red pepper... very nice. :)

RH> Quite ambitious. Lots of veggies--I would have probably taken a bit
RH> of corn and some broccoli, as well as a little hors d'oevre.

NB> The hor d'oeuvre was indeed ambitious... I think Sam hadn't realized
NB> just how painstaking it would be.... but it was well worth the effort.
NB> He does like to do that sort of thing... :)

Does he work in a food services job? Sounds like he'd enjoy that.

NB> NB>> For salads, there were a couple of different large tossed
NB> salads, NB>> a bowl of applesauce, and a fruity tuna pasta salad
NB> (which turned NB>> out to have apple pieces in it, along with
 NB> pineapple... I handed
NB> NB>> off the apple to Richard, the rest was pretty good).

RH> I like to combine apple with tuna--but not if I know you're going to
 RH> be eating it.

NB> I used to like putting apple into things, too... ;) And eating it...
 NB> ;0

Sigh! Any chance you'll "outgrow" the allergy?

NB> NB>> And then there were an assortment of breads and rolls, including
NB> a NB>> loaf of Glutino gluten-free bread, with butter packets
 NB> available.

RH> Feast time! If you went hungry, it was your own fault.

NB> Absolutely.. :) There was some effort put into making sure that the
NB> people with special dietary needs wouldn't go hungry, either... :)

Sweet! So many people don't think of that when cooking for a crowd.

NB> NB>> For dessert, there was also a variety... one was a
NB> napoleon-structured NB>> dessert, with layers of saltines and banana
NB> pudding, with a chocolate NB>> layer on top, which Richard had a
NB> couple helpings of. Another was a NB>> mint chocolate cheesecake
NB> with chocolate curls atop, made by a 17-y-o NB>> young man, which was
NB> VERY good (I had some of that one)... :) Our NB>> pastor made some
NB> very yummy pecan bars, a slightly drier version of a NB>> pecan pie,
NB> which was also very good. Also some cupcakes, possibly NB>> store
NB> bought, didn't pay much attention to them... Also a shark cake,

RH> What's a shark cake? Otherwise, time for me to OD on sugar carbs! (G)

NB> A cake made in the shape of, and frosted to look like, a shark head
NB> with the mouth open and showing all the teeth... :)

CUTE! Hopefully the one bringing it got pictures before it was cut up.

RH> Good to sned the gluten free bread home with the family that needs it.
RH> We try to do similar when we cook for Life Group. No gluten
RH> intolerances that we know of tho.

NB> Our church, small as it is, seems to have a high percentage of that...
NB> I know of 5 adults, along with two of the three children of that one
NB> family. And at least one of the adults is also lactose intolerant...

It's also more out in the open much more than it used to be.

NB> NB>> I think we were fed better than if we'd gone out to eat for
 NB> NB>> Mother's Day... :)

 RH> I don't think so, I know so! (G)

NB> And you didn't even get to taste it... ;)

Not physically but from your description, it was a ffeast well worth the
effort.

Catch you later,
