I use mine mostly when I'm putting up; I prefer to pressure can over
doing a boiling water bath. It gets used from time to time to cook
something like pumpkin but not meals.

I know what you mean--some days I use it as part of the prep for every
meal.

It can be done but does take some prior planning. Easier to cook in a
camp environment than a home one without a microwave tho.

Sounds like you need to invest in a heat diffuser to keep with your
camping stuff. It works ok on electric stoves but better on gas ones. It
may help, if you put a larger pot onto a small burner the diffuser will
spread the flame enough to keep it at a lower setting.
