I suspect that the "buffalo tips" you saw adverted were probably beef tips in
some manner of hot sauce. The "original" Buffalo wing sauce was merely a mix of
Frank's Louisiana Hot Sauce (made in New Jersey) and butter in equal
proportions. Lot's of people think that any wing or any meat in any hot sauce
mixture is automatically "Buffalo" (whatever).

Or they may have been actual bison tips done up like sirloin tips (and served
with noodles) like beef tips. But, I sort of doubt that.

Here's a recipe that I found for "Buffalo" Tips that is probably similar to
what you were offered ....

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Buffalo Sirloin Tips
 Categories: Beef, BBQ, Chilies, Cheese
      Yield: 5 servings

      4 tb Butter; softened
      2 tb Franks's hot sauce
      2 tb Chilli sauce (Heinz)
      1 lb Sirloin tips; blotted dry
           - w/paper towels
      1 ts Salt
    1/2 ts Mexene chilli spice mix
    1/4 ts Black pepper
      4    (to 6) skewers; wood or
           - metal
           Leaves green leaf lettuce
           Blue cheese dressing

  Preheat grill on high.

  In mixer or food processor, make buffalo sauce by mixing
  butter, hot sauce and chili sauce until completely
  combined.

  In small mixing bowl, combine sirloin tips, salt, chili
  powder and pepper.

  Thread seasoned sirloin tips onto skewers, keeping the
  thickness even and allowing space between each piece.

  Place skewers on grill and cook to desired doneness.

  Remove skewers from grill and use tongs to slide cooked
  sirloin tips into a large bowl.

  Toss cooked tips with buffalo sauce until well-coated. Use
  a toothpick to remove tips from bowl onto a plate lined
  with lettuce leaves. Pour extra sauce into a dipping cup
  and serve with tips. Serve with dressing.

  Yields 4 to 6 servings.
