I had 30 years of eating pretty sensibly, though always
high fat, with a fair amount of exercise. It wasn't until
I started eating lower-fat and also quit exercising that my
heart problems came up. This mirrors what that crazy doctor
who wants you to eat lots of saturated fat, I've forgotten
his name, suggests.

My brother probably hasn't prepared a balanced meal in his
life. It's not my problem. Unless something unexpected
happens, I won't be around to experience his dotage - which
is fine, as mine own is enough to worry about.

Probably depends on the standards of the sponsoring and
regulating agencies, the recipes of the purveyor, and the
skill of the cooks. But my experiences stem from Montgomery
County, MD, which is one of the most affluent and cultured
areas in the country, where one might expect the social
services to be of a higher than usual quality.

I tried to find citations to standards on the Internet but
was swamped with useless information - there are too many
providers to begin with and too little regulation; this is
an area where government oversight would be a distinct plus. 

By the way, Google search on "meals on wheels" + standards
also yields articles with the terms guidelines, regulations,
and requirements - 470000 of them. Putting standards into
quotes seems to exclude those terms, but the count still 
stays at 470000.

Celery stew (KEREVIZ GERAGOOR)
cat: Armenian, main, low fat
servings: 4

2 to 2 1/2 lb lamb meat with bones (stewing lamb)
1/2 c water
1 ts salt
1 lg onion. sliced
1 bn celery - washed and deveined and chopped l"
2 c water
1 ds black pepper
1 ds red pepper
1 peeled ripe tomato finely sliced
- or 1 Tb tomato juice

Wash lamb meat. Cook well in 1/2 c water in covered
pan with 1 ts salt. When water is evaporated and meat
turns color, add onion and mix. Add celery and another
2 c water. Add black pepper and red pepper. Taste for
salt. Cover and cook. Add tomato. After it comes to a
boil, cook over medium heat 1 hr or until celery is
tender. Serve hot.
