      Title: Tofu & Beef Stir Fry

      2 tb (to 3 tb) soy sauce
    1/4 c  Chinese rice wine or dry
           - sherry
      1 tb Hoisin sauce
    1/2 ts Garlic-chile sauce
      1 ts Toasted sesame oil
      1 tb (to 2 tb) minced fresh
           - ginger
      2 cl Minced garlic
      4 oz (to 6 oz) tender beef steak;
           - very thin sliced across
           - the grain
  1 1/2 ts Cornstarch
      1 tb (to 2 tb) oil
     14 oz (to 16 oz) firm tofu; in 1"
           - cubes

  Serve with rice and stir-fried asparagus or greens
  drizzled with oyster sauce. While you are preparing the
  other ingredients, you can drain some of the water out of
  the tofu: Place tofu on a plate, top with another plate,
  then weight it down with cans or a bowl of water. Arrange
  a pot holder or folded kitchen towel under one end of the
  bottom plate to allow the water to drain out.

  In a medium bowl, combine the soy sauce, rice wine, hoisin
  sauce, chile-garlic sauce, sesame oil, half of the ginger
  and half of the garlic. Place the beef in a small bowl and
  toss with just enough of the sauce to coat it, about 2
  tablespoons. Stir in 1/2 teaspoon cornstarch. Add the
  remaining 1 teaspoon cornstarch and 1/4 cup water to the
  remaining sauce.

  Heat a wok over medium-high heat. When hot, add 1
  tablespoon oil and the remaining ginger and garlic.
  Stir-fry for 30 seconds, then add the beef and stir-fry
  until browned, about 5 minutes. Remove from the pan.

  Reduce heat to medium. Add a little oil to the pan to just
  coat it, if necessary, then add the tofu. Gently toss
  until the tofu is barely fried, about 2 minutes. Add the
  sauce and bring to a simmer, tossing gently. When the
  sauce has thickened, return the beef to the pan to reheat
  for 1 minute. Taste and add more soy sauce or salt, if
  needed. Serve immediately.
