 ML> The incidence of heart disease among the Inuit is said to be

It is. Marine animals are fish eaters and their blubber is quite
different than the fat of land animals ... relatively unsaturated
and very high in omega acids.

What is killing them is diabetes since they started eating store
bought food which became available in the 50's and 60's in most
places. Their systems are not used to consuming carbs at all whereas
our ancestors have had over 8000 years to get used to them.

Even if they don't make the best pizza in the country I still have
to go once, merely because it is the oldest pizzeria in New York
and therefore the entire new world.

free breakfast cereal!

Here at home we have frost warnings so Roslind harvested all our
herbs, chilies and tomatoes today. Any herbs above what we plan to
eat in the next week are being gently air dried. We have 3 kinds of
chives, 2 oreganos, basil, 2 mints, marjoram, parsley, cilantro,
dill, sage, several thymes, leafy celery and rosemary. I won't be
drying any cilantro though as that is a wasted effort, just eating
lots of it in the near future.

Also on the menu is yu choy, one of my favourite greens. It was on
special this week so I got lots. Last night I stir fried a bunch
with crescent onions, made up a brown sauce with soy, a bit of
hoisin, some mustard and lots of oyster sauce and served it over
pancit canton. Very nice.

Tonight Roslind made a hamburger stroganoff sort of thing with lots
of our fresh chives, bunching onions and Anaheim pepper while I made
a companion salad of field greens with just about every herb from the
garden except the dill and mint.

      Title: Ambrosia Cake
 Categories: Frosting, Cakes, Tnt, Jw
      Yield: 12 Servings
 
           CAKE:
    3/4 c  Coconut milk
    1/4 c  Fresh coconut; finely
           Grated
      3 c  Cake flour; sifted
      3 ts Baking powder
    1/2 ts Salt
      3    Egg whites; stiffly
           Beaten
  1 3/4 c  Sugar
      1 c  Butter
      3    Egg yolks
    1/4 c  Milk
      1 ts Vanilla
    1/4 ts Orange rind
           SEVEN MINUTE FROSTING:
      2    Egg whites; unbeaten
  1 1/2 c  Sugar
      5 tb Cold water
    1/4 ts Cream of tartar
  1 1/2 ts Light corn syrup
    1/4 ts Salt
      1 ts Vanilla
  1 1/2 c  Coconut; finely shredded
           Mandarin orange sections
    1/4 ts Orange rind
 
  
  Sift the flour, baking powder, and salt together twice.  Beat the egg
  whites until stiff, then add 1/4 cup of sugar and set aside. Cream
  butter until fluffy and add the remaining sugar and egg yolks, mixing
  well. Add flour, alternating with milk and coconut milk, and blend
  until smooth. Add vanilla and the 1/4 cup grated coconut.  Last, fold
  in egg whites. Bake in 3 well-buttered 8" circular layer pans in a
  preheated 350F oven for 30 minutes.  Cover with Seven Minute Frosting
  (instructions follow):
  
  Seven Minute Frosting: Place egg whites, sugar, cold water, cream of
  tartar or corn syrup, and salt in the top of a double boiler. Then
  place over rapidly boiling water, beating constantly with an egg
  beater, for 7 minutes or until icing will stand in peaks.  Remove
  from heat, add vanilla, and continue to beat until thick enough to
  spread.  When entire cake has been frosted, sprinkle coconut and
  orange rind  generously over the top and sides Then decorate the top
  with orange sections.

  jimznotes: I quadrupled the orange zest, using dried rind that I
  buzzed in my spice mill, and used 1 full cup of Coconut Dream for the
  cake liquids, no dairy milk.
  
  I also made the cake just one layer thick in a single 9 X 13
  rectangular pan which needed 40 minutes at 350 F.
