Considering I've been in some degree of heart failure (I
really doubt that my EF has been an acceptable 50 any time
in my lifetime) since the 1960s at least, and my shoe size
has fluctuated between 7.5 and 9 all my adulthood, I've
been aware of the issue, just not that it had to be treated.
The split shoes were 8C or so; maybe I should have paid more
attention to the width issue - for me the issue is
underhealthcare; somebody has to make up for people like my
brother, who use far too many of the medical resources in
proportion to their need.

So it's a reactive thing, not an entitlement thing?

Sort of like my father (who felt deprived as a child) every
day wanting his ice cream because he had access to it rather
than because he wanted wanted it.

The protective effect of exercise has been called into
question lately. Among my friends, too, the level of
healthiness among the athletes and the antiathletes is
not substantially different.

Beef Enchiladas
categories: Texan, main, Tex-Mex
servings: 4 to 8

1 lb lean ground beef
- or 1 pk fully cooked shredded beef
1/2 c chopped onion
2 cloves garlic, crushed
1/2 ts salt
1/4 ts pepper
2 cn (10 oz each) mild enchilada sauce
8 sm corn tortillas (6-7" diameter)
3/4 c shredded pepper-jack cheese
1 Tb chopped fresh cilantro
sour cream (optional)

Preheat oven to 350F.

In a large nonstick skillet, brown ground beef, onion,
and garlic over medium heat 8-10 min or until beef is
no longer pink, breaking beef up into 1/2" crumbles.
Pour off drippings. Season with salt and pepper. Stir
in 1/2 c enchilada sauce. Set aside remaining sauce.

If using fully cooked shredded beef, stir in 1/2 c
enchilada sauce and follow recipe below.

Pour second can of sauce into a shallow dish. Dip
tortillas, one at a time, into sauce to coat both
sides. Spoon 1/8 of beef mixture evenly down the
center of each tortilla and roll up. Place seam-side
down in a 13x9" baking dish.

Cover dish with aluminum foil. Bake 15 min.

Remove foil. Spoon reserved enchilada sauce over
enchiladas. Sprinkle with the cheese. Continue
baking uncovered for 10 min or until cheese is
melted. Sprinkle with cilantro. Serve with sour
cream if desired.
