Interestingly, grass-fed beef is very high in the good omega
fatty acids (research indicates there are good and bad ones -
3 and one other number are good, most are neutral, and some
are bad), whereas corn-fed is not. Sad that corn-fed tastes
richer.

One reason I am becoming diabetic is that for years after
eating almost no protein, I started eating almost all protein,
and then I eventually started eating almost no protein again.
My poor system has no idea what to make of things but seems
highly relieved in the last few years, when I'm back to a
mostly protein diet.

I can see suicide pills (to get back on a morbid topic
that we've been tossing around for a while) that say
"certified cyanide-free" when they are really 99.6%
cyanide-free.

It's kind of nice. To the uninitiated, it's a relative
of bok choy, which used to be called oilseed rape but
goes more commonly now under the name canola plant.
Canola being a made up word, so they say, out of can-,
for Canadian, and -ola, for oil; same kind of facture
as Mazola out of maize and -ola.

Thank goodness for not the dill and mint. Too many
competing strong flavors. Though I've heard of dill
put in stroganoff.

RED ROAST BRAISING LIQUID
Categories: Asian fusion, celebrity, ingredient
Yield: 7 to 8 c

1 qt soy sauce
2 c red wine                  
1 c balsamic vinegar               
2 c water
2 lb rock candy or brown sugar
1 lg ginger root, washed,
-  cut into long 1/4" slices
3 dried Thai bird chiles
1 hd garlic, split
1 star anise
1 bn scallions, cut into 3" lengths
1 orange, quartered
3 lg pieces of orange rind
2 cinnamon sticks

In a nonreactive stock pot, add all ingredients and
bring to a simmer until the rock candy melts. Let
simmer until reduced by 25 percent, about 1 hr,
then strain. Let cool to room temperature. Store
in a glass jar in the fridge for up to two weeks.
