Boys and girls, can you say "yes and no"? I've figured out
that a modified paleo or Atkins regime is probably best for
me - whenever I went on a diet with substantial carbs, I
had horrible things happen to me. A high-protein high-fat
intake does wonders for my numbers, disposition, and
waistline, so that's what I try to follow. It's expensive,
and so there are substantial falldowns, which I usually
suffer the consequences for.

I was relatively obedient myself, surprising to relate,
and I had few such prohibition-induced cravings. The one
major forbidden food, oddly, was rou si (pork floss),
supposedly because it was available only from Asia and
not processed to the standards required over here.
Eventually the opportunity came up, and I tried it, but
I didn't jump up and down waiting for it, and I still
don't. It is essentially an umami bomb, and if it's in
front of me, I'll eat however much is available, as
speedily as possible, but otherwise, eh, I'll wait for
next time. Funny thing - at the recent picnic, it was
available in the H Mart, two flavors, with a blue label
and a red label, and I sort of mulled over which to get,
and then I forgot about it altogether. Not like me to
pass up the opportunity to compare two types of anything,
much less one I really like, but there it was.

By plurality that may be true, but it's not possible to
generalize. From what I've seen of the population of my
aging friends, there's a whole spectrum, including the
totally exercise-averse whose hearts have taken them into
their 70s-80s looking and acting like midlifers. One thing
I can say with confidence is that the ones who engaged in
regular vigorous exercise are in worse shape than the ones
who didn't - I'm not sure about their cardiovascular
systems - they seem to have the same level of heart disease
and stuff - but their peripheral systems are much worse.
If I have any takeaway from this, it's that you should not
run, probably should not hike, and above all never ski.

  But those folks that
 RH> park as close as they can, get all kinds of junk food and basically

There are people for which such a regimen doesn't cause
problems. One can't even say, oh, if they'd taken care of
themselves, they'd be in even better condition; not only
is that uncalled-for speculation, but there are substantial
counterexamples out there - the ones who smoke like chimneys,
eat bacon at every meal, drive to the bar ten times a week,
and they live to bury their clean-living siblings.

Herbed Mussels en Brochette
cat: starter, main, shellfish
servings: 6 to 12

3 qt mussels
10 oz bacon
melted butter or oil
h - coating
1 c flour
1 Tb minced parsley
1 ts thyme
1 ts tarragon
s, p
h - for frying
3 Tb butter
3 Tb oil
h - for garnish
tartar sauce

Clean and steam mussels. Shell the mussels and remove and
discard the black rims. In a saucepan blanch bacon in
boiling water for 5 min, drain, and pat dry with paper
towels. Cut bacon into 1" squares. Thread the mussels
on six 8" skewers, alternating each mussel with a square
of the bacon, or thread the mussels and bacon on twelve
4" skewers (for hors d oeuvres). Roll the brochettes in
melted butter or oil and coat them with coating.

Fry the brochettes in butter and oil for 2 min on each
side, or until golden. Drain the brochettes on paper
towels. Serve the brochettes with tartar sauce. Serves 6
as a first course or 12 as an hors d oeuvre.

M's note: the black rims are fine; what you want to get
rid of if possible are the byssus, the threads that anchor
the shellfish to the rocks and each other - these have a
texture similar to dish scrubbies.
