Smithwick is one of my favourite quaffs. Which is odd for me as I like my
brewski (generally speaking) on the bitter side (well hopped) - eschewing
Budwater as being "too sweet".

      Title: Stephanie's Slimmed-Down Potato Salad
 Categories: Potatoes, Squash, Poultry, Dairy
      Yield: 7 servings
 
      2 lb New potatoes; whole,
           - unpeeled
           Salt & fresh ground pepper
    1/2 c  Minced red onion
      4 sl Turkey bacon; browned, in
           - thin strips (opt)
      2 c  Thin sliced English cucumber
           - (opt)
      6 tb Reduced-calorie mayonnaise
      2 tb Sweet pickle juice
      2 tb Chopped fresh dill
  1 1/2 tb Dijon-style mustard
    3/4 c  Low-fat buttermilk
      1 tb Capers

  To slim down my salad, I hold the mayo and use a variety of
  ingredients to keep the potatoes moist. Possibilities
  include light sour cream; low-fat yogurt; reduced-calorie
  mayonnaise; buttermilk; and creamy cucumber dressing, a
  reduced-calorie version. I vary the combinations depending
  on what I have on hand. Try these substitutes on your
  favorite potato salad recipe, or try out the accompanying
  recipe.
  
  To develop the flavors, make this potato salad overnight or
  at least a few hours before the picnic.
  
  Boil or steam the potatoes until tender, 15 to 25 minutes
  depending on the size. Drain and let cool. Cut them into
  small cubes, retaining the peel. Put into a large bowl with
  the onions, bacon and cucumbers (if using).
  
  In a separate bowl combine the mayonnaise, pickle juice,
  dill, mustard, buttermilk and capers. Pour over the potato
  mixture. Refrigerate.
  
  Makes about 6 cups; 7 1/2 cups with cucumbers.
