Turns out the patron's wife wasn't particularly musical
and (apparently) saw music as a competitor for her
husband's affections.

And of course there's the possibility that we don't have
the total of the music he wrote (he could have written
secular music on church time or liturgical music when
he was working at Cothen. Or maybe the identification of
the date of existing pieces might not be correspondent
with the date of conception or finishment.

I doubt it - they were really minor works.

It was so much better than the famous Richter version that
I could hardly believe it.

I was unaware he was even alive - he's kept a low profile for
decades.

DASHI BROTH
Categories: Asian fusion, celebrity, ingredient
Yield: about 5 c

1 lg piece kombu (24-30 sq in)
2 sl (1/4") fresh peeled ginger cut lengthwise
- from a 2- to 3"-long piece
2 c dried bonito flakes

Clean the kombu by wiping it with a damp cloth. Place
the kombu and ginger in a stockpot with 5 c of cold
water and heat over medium heat. Just before the water
boils, remove the pot from the heat. Watch carefully;
you don't want the water to boil or the dashi will
become too strongly flavored.

Allow the mixture to stand for 5 min, remove the kombu,
and return the pot to medium heat. When the broth once
again nears the boiling point, remove the pot from the
heat and add the bonito flakes. When the flakes sink to
the bottom of the pot, strain through cheesecloth or a
fine-mesh strainer. Use or cool and store.

Lasts two weeks refrigerated or one month frozen.
