As with most breads, you can probably put it in the fridge to rise
slower if you can't give the "straight thru" time to making it.
Actually, most yeast breads are hands on for about 20 minutes, then free
time while it rises, another maybe 15 minutes to punch it down and
shape, then more free time while it rises. Maybe 5 minutes total to
light the oven and put it in, then free time while it bakes. Another 5
when it's done for you to take it out and put it on racks, a few minutes
after it has cooled to wrap and put away. Easy enough to do betwixt and
between other things on a stay at home day.

Meanwhile I did find one that looked similar but it called for an over
night rise. Wonder if I could shorten it by adding a bit more yeast, or
just work with it the way it is. I'll have to give it a try once we get
relocated.

Quite, and they've not found a church home yet which makes it more
difficult. Once you get settled in with a church, it seems things settle
down a bit, even if in reality they haven't.
