Different years, but when they ask for your birthdate
and the answer is January 1, mumble mumble, the niceties
sometimes get ignored.

He's over 70 and in pretty rotten condition.

You apparently look out for moi more frequently than I do,
then.

I've never composed anything of note, har har.

Several variations - people take credit for stuff I've done,
people blame me for stuff they've done, and people just lie
for the heck of it, even if it doesn't benefit them to do so.
And it is easier just to let things go, but then things
sometimes escalate and/or come back to bite one in the butt.

Private practice has the additional check or balance of
the personal touch, though.

One does. There are new numbnesses, though, somewhat
disquieting.

And when ID came on line, that muddied the waters further -
but when their prime concern turned out to be a false alarm,
they went away.

Basic marinara sauce
cat: Italian, Singaporean
yield: 1 large batch

5 cloves garlic, minced
2 lg onions, finely chopped
1/2 c red wine
7 c milled tomatoes
3 1/2 c tomato puree
1 Tb tomato paste
4 Tb frying oil (I used a chicken fat and bacon
- renderings-infused olive oil to amp up the flavour)
Salt
1/2 c water
1 pn dried basil
1 pn dried thyme 


1) Fry garlic and onions in oil about 2 min on medium-high heat.

2) Add red wine and fry until almost completely reduced, 2 min.

3) Add diced tomatoes and fry 1 min.

4) Add tomato puree.

5) Add tomato paste, herbs and pesto and lower to a simmer for 
1 hr, stirring constantly to ensure the bottom of the pot doesn't 
burn. Add water, by the tablespoon, if necessary. 

6) Salt to taste before using. If not using immediately, freeze to 
store up to a month.
