ML>> I like macadamias but find the price to performance not
ML>> so good. The flavor after all is subtle, reminding me
NB>> They are near the top of the list of my favorite nuts... but I do
NB>> tend to get them in smaller amounts, and not necessarily very often.
 ML> I'll get them if there's only a premium of a couple bucks a
ML> pound over other preferred nuts (cashews, etc.) but will not
ML> pay luxury prices for them.

A little bag of them at Lori's doesn't break the budget... but they've
not been available there for a few months or more, now... their
supplier's been out of them apparently...

ML> Speaking of luxury and nuts, did you see that the VP of cabin
ML> services of Korean Airlines went ballistic when the purser on
ML> her flight gave her a packet of macadamias when 1. she hadn't
ML> asked for macadamia nuts and 2. they were supposed to be
ML> served in a ramekin anyway. I actually agree that the niceties
ML> should be observed, and one should be asked "would you like
ML> some nuts" (forestalling allergy issues, among other things),
ML> and in first class one shouldn't be served a packet of nuts.

Etiquette.. ;) No, I'd not seen that, but then my sources of news are
rather limited in scope, and that sort of odd bit doesn't usually make
it to NPR top of the hour headlines... ;)

ML> It's the extremeness of her reaction that was bizarre - she
ML> browbeat the captain of the aircraft to return to the gate
ML> and offload the employee (thus causing a staffing shortage
ML> whose effects would have been worse than having a slightly
ML> benighted or even lousy server on board). Needless to say,
ML> the VP was fired, despite her being the daughter of the
 ML> chairman of the board.

OTR, was she...? ;> Quite the over-reaction, to say the least... and
not surprising that it gave indication that she was in a position for
which she was not suited... ;/

ML> Odd side effect: in Korea there has been a boom in sales of
 ML> macadamia nuts.

Interesting. ;)

ML> Other peculiar news is that the youngest faculty member of the
ML> Harvard Law School was overcharged $4 for a Chinese takeout
ML> order and kicked up an almost equal furor by sending a request
ML> to the restaurant for treble damages (i.e., $12). Funny thing
ML> is the vehemence of the reaction against him when he is in all
ML> respects, except for public relations, right.

Public relations rules, of course... Sufficient, probably, it would
have been to just ask for the overage to be returned... and not have
caused such a furor...

NB>> I was wondering about that, after the discussion here of why not to
NB>> use raw cashews for nut milk... and then seeing them for purchase at
NB>> Wegmans in the Family Pack canister intended for eating... having
NB>> had them raw and toasted, I much prefer them toasted (and generally
NB>> lightly salted) as well.. :)
ML> The rather pale-looking and -tasting rawer nuts have
ML> their appeal, mostly as a novelty.

I think that HelenLou prefered them rawer... she called them sneeze
nuts, and it was her favorite nut.. :)

ML>> I guess raw almonds are nice,
ML>> but cooked are ever so much more interesting.
NB>> And covered with chocolate, even nicer... ;)
ML> Most of the mass market products I've seen use a
ML> stabilized product with gums or glazes, so they're
ML> not so exciting to me. There are better and less
ML> shelf-stable ones, though, and at their best they
ML> do enhance the already considerable appeal.

I generally get mine at Lori's, dark chocolate, probably organic..
and I don't know how shelf-stable, as they don't seem to last long
enough to find out... ;)

ML> Best of all are chocolate punctuated with almonds (whole
ML> or even slivered; crushed nuts are less attractive).

Agreed. The Hershey's Extra Dark has crushed, but it's with blueberries
and cranberries, so not too bad that way...

ML> There are also cocoa-dusted nuts, but these don't
ML> appeal to me as much (no luxurious mouthfeel).

Also agreed.

ML> I recently got Lindt dark chocolate with hazelnuts,
ML> and the surprise on opening the package was that the
ML> nuts were crushed, which though initially offputting
ML> one got used to, but what one did not get used to is
ML> that some of the nuts were rancid.

Had a similar experience with a bag of DeMet's Turtles... so far it's
only been the one (individually wrapped) turtle that had a rancid nut
in it, but it was a not so pleasant surprise to bite into... I think
the pecans in the turtles are broken pieces, not crushed, though...

ML>> I wonder if lightly roasted nuts might produce an
ML>> extractive mylk that would tickle my palate more
ML>> than the ones made with raw ones. I could see that
ML>> fully cooked nuts might yield a too-strong flavor.
NB>> That would be worth experimenting with... I could see that as a
 NB>> good possibility, too... ;)
ML> I think so. I think a really light hand with the roasting
ML> would be necessary to prevent bitterness or a burned aroma,
ML> but properly done it might be really good.

Indeed.

 ML> Carrot Kheer
 ML> cat: Indian, simplified, dessert
 ML> 4 md carrots
 ML> 3 c milk
 ML> 8 cashew nuts, ground
 ML> 3 cardamom seeds, cracked
 ML> sugar (to taste)
 ML> 1 c water

A different sort of kheer than I'm familiar with... :) Does kheer just
mean pudding, actually...?
