Scanning into a PDF file would be an exact picture.  Later on, you could
pull up the file from the book in Adobe and print out an exact copy of
the original page or two.  The problem with OCR programs is that they
have a hard time deciphering the various fonts in strange (to them)
locations on the page and turning them into ascii that could be imported
into mealmaster or the equivalent.

The mess is especially great on those books which seem to use a variety
of fonts.  The text might import with 95% accuracy to the point where
one could read it and understand what should have been there.  Then a
spell corrector program might make it a bit better (or worse).  However,
ingredient quantities often get turned into letters, resulting in a line
like

Like we both said -- we can type that faster than we can read and
correct it.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Keema Matar (Beef with Peas)
 Categories: Indian, Beef, D/g, Boat, Curry
      Yield: 2 servings
 
      1 lg Onion finely chopped
      3 tb Peanut oil
      2    Cloves crushed garlic
    1/2 ts Garam masala
    1/2 ts Ground ginger
    1/2 ts Ground turmeric
    1/2 ts Chili powder
      1 lb Ground beef
      4 md Tomatoes, chopped
    1/2 c  Frozen peas
        pn Salt to taste
      1 c  Water
 
  Brown ground beef in pan, drain and set aside.
  
  In frying pan fry onion in peanut oil until it is lightly browned.
  Mix the garlic and the spices, add to the onion and fry gently for
  about one minute.  Add the meat.  Add tomatoes, peas, pour in the
  water and salt to taste.  Simmer covered until meat is tender and
  most of the liquid is absorbed and flavours merge, about 45 minutes.
  Serve with boiled or fried rice and a selection of accompaniments

 DD> 1/4 c  Heavy cream
 DD> 1/4 c  Sour cream
 DD> 10 oz Box frozen raspberries in
 DD> - light syrup; thawed
 DD> 2 ts Cornstarch
 DD> 10 oz Box frozen peach slices
 DD> 1/4 c  Sugar
 DD> 1    Kiwifruit; peeled, sliced
 DD> 1    Ripe peach, peeled, sliced
 DD> 1/4 c  Fresh raspberries
 DD> 
 DD> Preheat oven to 375oF/190oC. Make crust: In medium bowl,
 DD> using a fork, toss crumbs with butter and sugar until
 DD> moistened. Pour into 10" springform pan. With fork, press
 DD> mixture evenly over bottom and up side of pan. Bake 5
 DD> minutes or until golden brown. Cool on wire rack.
 DD> 
 DD> Increase oven temperature to 450oF/230oC.
 DD> 
 DD> MAKE FILLING: In large bowl of electric mixer, at high
 DD> speed, beat cream cheese, sugar, flour, lemon zest, orange

 DD> half.

 DD> Arrange kiwifruit and peach slices along the line where
