There are fewer independent pubs than there used to be, but
when you lived there, these establishments were likely not
to have been chains. What you describe used to be called
"tied houses," which were bound by contract to offer only
or primarily one brewery's product; in return for this
promise, the brewery offered substantial discounts. Places
that were under no such arrangement were called "free houses"
and tended to stock a wider variety of products, but as their
costs were higher, the consumer prices were a few pence higher.

Would have made sense to have a circular path! And in the
interest of preventing overcrowding, it might have been
sensible to allow starting in various places rather than
just at a defined beginning (though this might jeopardize
the social aspect of the enterprise).

I am amazed at what stunts one can accomplish in the name
of alcohol - and at the relatively low (reported) injury
rate on such occasions.

Cider Braised Chicken with Sage and Apples
categories: poultry, main, Singapore, Normandy
feeds: 4

4 whole chicken thighs
15 cm length chorizo sausage, casing removed
- diced into 1" cubes
- (leave this out if catering to Muslims)
3 sl streaky bacon (ok to increase to 6 sl
- if a bacon lover, or leave it out completely
- if catering to Muslims)
2 Fuji apples, sliced 1/2"
2 shallots, minced finely
2 c hard apple cider (sub non-alcoholic)
1/2 c chicken stock
2 Tb wholegrain mustard
1 c fresh sage leaves
3 Tb whole double cream

1) Sear chicken in heated pan on medium-high heat,
about 5 min each side till browned, salting liberally.

2) Set aside and reserve.

3) In the meantime, crisp bacon in another pan 2 min
on each side on medium-high heat. Cut into 1" cubes
and reserve.

4) Using the bacon pan, brown chorizo until just
before sausage juices start running, about 4 min.
Set aside.

5) With the chicken pan, pour off most of the chicken
fat, leaving behind about 1 Tb chicken fat, and fry
shallots until softened, about 2 min.

6) Add cider.

7) Add mustard, stirring it into the cider.

8) Return chicken to pan, and top up with stock until
the liquid almost covers the top of the chicken.

9) Add sage.

10) Return bacon to pan. Bring to a rolling boil
before lowering to a simmer for 40 min till
fall-off-the-bone tender.

11) In the meantime while chicken is simmering,
using the bacon-chorizo pan, caramelize apples
in the bacon-chorizo fat, about 5 min. Set aside.

132 Stir cream into sauce, and serve steaming hot
with apples, chorizo, and additional sprinkles of sage.
