True for size and probably selection, but for quality I'd
suggest that it merits the designation Weggies II or perhaps Jr.

Maybe because bus tourists tend to be undeveloped in the palate
department.

I get a little rolleyes when people do the "best of" "worst of"
thing, partially because of the inadequate sample sizes and
partially because of the arrogance of the whole idea. Also
because journalists tend to be idiotic self-important twits
these days (perhaps they always were, but the bad ones in
olden times have been forgotten).

So if you'd held off for a couple days, they might have been
gone? In any case, there was some beneficial effect, as you said.

Masaura and Potato Tarkari

Yield: 1 batch

h - For Masauras (Sun-Dried Lentil-Vegetable Balls)
4 c split black lentil, presoaked overnight
3 c finely chopped onion, scallions, radish, cauliflower
1 ts asafetida
1 ts red hot chili powder
1 Tb garlic
1 Tb ginger
1 Tb curry powder
s, p
1 c water
h - For Tarkari
3 c masauras
1 c potatoes, diced
1 c chopped onions
1 c chopped tomatoes
1/2 ts cumin seeds
1 ts garlic paste
1 ts ginger paste
1 ts chili paste
1/2 ts turmeric
1 Tb cumin powder
1 c whole cream
1 c broth or water
6 Tb oil

1 Tb chopped cilantro (for garnish)

Potatoes and Lentil-Vegetable Balls Curried in Spices

Note: Masauras are dehydrated (usually sun-dried) balls of
black lentil paste and minced vegetables. Allow ample time
to make masauras before assembling the dish.

To make the masauras. In a blender, combine soaked lentil,
water, salt, pepper and make smooth paste. Reserve the
paste in a large bowl. To the lentil paste, add chopped
vegetables and all other ingredients; mix thoroughly to
incorporate all ingredients. Make 1" balls of the mixture
and arrange them on a baking sheet. Allow sun-drying until
the ball are completely dehydrated. Food dehydrator can be
used instead. Store the dehydrated lentil balls in airtight
container.

In a large nonstick saute pan, heat 3 Tb oil and fry
masauras until golden brown. Reserve in a large plate. To
the same pan, add the remaining amount of oil. Fry cumin
seeds until dark. Add chopped onions and turmeric and fry
until lightly browned. Add potatoes, salt, and pepper to
the onion mixture and fry on low heat for 10 min until
potatoes are lightly browned and half cooked. Add garlic,
ginger, chili and cumin powder and stir for a couple min.
Add browned masauras to the potato mixture followed by
tomatoes, broth and cream. Cover and simmer for 15 min
or until the potatoes are cooked tender and a desired
consistency of the stew has been achieved. Garnish with
chopped cilantro. Serve with steamed rice.
