I made a pot of spaghetti sauce and considered putting
one in but chickened out. Instead I used a tablespoon
of cayenne, which produced a distinct but somewhat
subdued burn. I made one can of tomatoes' worth, about
8 servings: other ingredients were an onion, the Italian
sausage that I salvaged and talked about a couple weeks
ago, some olive oil, roast red peppers, duck fat, garlic,
and another secret blend of herbs and spices. Afterward,
Annie said, what do you want me to do with it, and I said,
freeze it, and I'll take it back on the plane with me. So
she said, it'll thaw and mess up your luggage. So I said
to double bag it. Being of a certain bent regarding
leftovers, she heard "bag it," so she abandoned the
project, and it went down the disposal. I particularly
mourned the loss of the duck fat. If I'd used a ghost
pepper, maybe I'd have done the dirty deed myself.

One wonders about the size of that hint. One irritating
thing about the habanero craze was that everyone and his
grandma was putting habanero in things and making them
(in restaurants) often too hot to enjoy or (in chains)
fruity in that dirty, rotten habanero way without the
benefit of the heat. Ghost peppers (bhut jolokia) are
just habaneros on steroids and carry that unpleasant
taste. I'm guessing that the Popeyes product has an
abundance of the taste and not substantially more heat
than their spicy products.
