There are strange coincidental factors, true, but my
not being able to use my arms properly can be just as
easily attributed to an accelerated aging (maybe from
the ordeal, admittedly) as to the hospitalizations.

It was for a few bites only. More recently, I've had
somewhat better appetite and can eat, well, almost
normal servings, though less frequently than before
and not the gargantuan quantities that used to unduly
impress people.

Yes, I thought of that.

Yesterday I had a cup of chili with a tablespoon or more
of "extra hot chilli" from India - I was fine. The ghost
guys were nasty hot, though.

I'm figuring too that before people had the luxury of
such things as angoras and alpacas, they made do with
what they had, most likely shorter-haired things. Or
did they just make felt?

Parsnip and Celery Root Latkes
categories: Jewish, Hanukkah, not quite
yield: 30

1 1/2 lb parsnips, peeled and cubed
1 1/2 lb celery root, peeled and cubed
4 cloves garlic, peeled
3 eggs
salt and pepper to taste
1 pn nutmeg
1 pn celery seed
panko crumbs, medium grind

Preheat oven to 300F.

Separately boil parsnips and celery root, each with
2 cloves of garlic and some salt. Drain well when
tender. Place on parchment paper on sheet pan to dry
off in oven. After 10 min, remove from oven and let
cool. Place vegetables in KitchenAid mixer with
paddle attachment and mash to a slightly coarse
texture. Add eggs and seasonings and mix.

Shape latkes into pancakes 1/2" thick and 2 1/2" in
diameter. Spread panko on a pan and coat latkes.
Fill a saute pan 1/2" deep with oil and fry latkes
gently, about 2 to 3 min on each side until golden
brown. Change oil if crumbs turn black. Serve with
a pear-and-port compote.
