I often infuse fat into limas and other dried beans by doing the
pre-soak with minimal water (1:1 ratio) and a splash of oil. The
beans absorb the oil and loose that chalky earthy aspect. Several
hours later I add the rest of the water along with both sugar and
salt (about 1 scant tsp each per cup of beans) to finish the
refreshing.

For the cookie makers out there I would also recommend Cookiemania
by Jeri Dry and Alix Engel.

Conversely it can be coated in seasoned flour and shallow fried in
very hot oil to develop a crust.

Some of those lists are worse than others. The Buzzfeed one is
absolutely horrendous! CNN readers show much better taste. That
ranker one just had to be juvenile.

Lobster and crab make appearances on at least one list each; I'm
surprised that shrimp prepared as for scampi didn't.

I can't agree with you on that one. It may be junk food but it is
tasty stuff, especially in the early hours after a night drinking
beer. To be made right you need hand cut thick fries fried in lard,
fresh white cheese curds (rarely found outside of Quebec, Ontario
and Vermont) and the right kind of gravy.

I also like American chili cheese fries and other similar variations
on the theme.

Of course the underlying premise is one has to like both potatoes
and big gobs of melted cheese.

      Title: Bacon Cheese Fries
 Categories: Easy, Potatoes, Bacon, Cheese, Onion
      Yield: 8 Servings
 
     32 oz pkg frozen French fries
      1 c  Shredded cheddar cheese
    1/2 c  Thinly sliced green onions
    1/4 c  Cooked crumbled bacon
           Ranch salad dressing
 
  Cook French fries.  Place fries on a broiler proof dish or
  platter.  Sprinkle with cheese, onions and bacon. Broil for 1-2
  minutes or until cheese is melted. Serve with ranch dressing.
