I do worse in cars than on planes and trains. Today I
had 5 hours' worth on the train and 1 hour on the plane,
and that was pretty good. Tomorrow, as I will be on planes
for in the range of 20 hours, I'd better sleep - got a
homeopathic product called "no jet lag" just to see what
will happen - I don't believe in homeopathy, but what the
heck, it won't hurt.

Oh, yeah, I remember ... it wasn't "real real," but it
was a pretty good substitute.

Don't push things beyond what's practical just for the
sake of being a good citizen. Your needs and that of your
family come first.

Kentucky hot brown
categories: airline, sandwich
servings: 6

h - Turkey
4 lb turkey breast, boneless, with skin
dried herbs such as parsley and thyme
s, p
melted butter for basting
h - Sauce
3 Tb butter
3 Tb flour
2 1/4 c whole milk
1 1/2 c shredded white cheddar
1/2 c grated parmesan
1 pn nutmeg

6 sl thick-cut loaf-style bread
- day or two old preferred
4 eggs
1/2 c whole milk
6 Tb butter
8 sl crispy thick-cut bacon
2 beefsteak tomatoes, sliced
parsley, chopped

Oven at 350F. Brush melted butter on turkey and season.

Bake turkey 1 hr or until internal temperature reaches
165F, basting every 15 min.

Let turkey rest 15 min, then slice 1/4" thick.

Meanwhile, cook butter and flour 1-2 min or until
flour is cooked. Slowly add milk and whisk until
sauce thickens and begins simmering. Stir in cheddar
and the parmesan. Whisk well. Season with nutmeg,
salt, and pepper. Set aside.

Mix eggs and 1/2 c milk.

Melt butter in a nonstick pan.

Dredge bread in egg mixture; shake off excess and
brown bread on both sides in pan. Remove to a baking
sheet or casserole.

Arrange turkey on the bread, ladle sauce over, and
top with additional cheese as desired. Broil until
lightly browned.

Transfer to plates. Add tomato slices, bacon, and
chopped parsley. Serve immediately.
